Youth doesn’t equate to health.

There was a time when I thought looking good meant being healthy.

I was young.
I was modelling.
I was slim.

But I didn’t understand blood sugar.
I didn’t understand gut health.
I didn’t understand hormones.
I didn’t understand longevity.

Youth can hide a lot.

Now my focus is different.

It’s not about being the smallest version of myself.

Meals like this support longevity because they

White Bean and Parmesan Chicken Soup

Serves 4
Approx 420 kcal 38g protein 10g fibre per serving

Ingredients

2 chicken breasts
1 leek finely sliced
1 large carrot diced
2 celery sticks diced
1 large banana shallot finely chopped
1 clove garlic minced
1 sprig fresh rosemary
1 tin cannellini beans drained
1 chicken stock cube
Around 1 litre freshly boiled water
50g Parmesan finely grated
2 large handfuls cavolo nero or kale finely shredded or spinach
1 heaped tablespoon cornflour mixed with 2 tablespoons water
Freshly ground black pepper
Sea salt

Served with wild rice and parsley

Method

Place a large saucepan over a medium heat and add a little olive oil. Gently cook the leek, carrot, celery and shallot with a pinch of salt until soft and glossy.

Add the garlic and rosemary and cook briefly until fragrant.

Crumble in the stock cube and pour over approximately 1 litre of boiling water. Add the Parmesan rind if using and bring to a gentle simmer.

Lower the chicken breasts into the broth and poach gently for 12 to 15 minutes until cooked through. Remove the chicken and allow it to cool slightly before shredding.

Stir the cannellini beans into the soup followed by the cornflour mixture. Simmer for a few minutes until the broth thickens slightly.

Add the shredded greens and cook until tender.

Return the shredded chicken to the pan and stir through.

Remove the rosemary sprig and Parmesan rind. Stir in the grated Parmesan and season with black pepper and sea salt to taste.

Serve warm with extra Parmesan and freshly ground pepper if desired.
