Mediterranean vegetable stuffed aubergine with feta cheese.
Add your choice of Mediterranean vegetable with some rapeseed oil and sweat down in a pan.
Half the aubergine and take out the centre. Add the centre to your vegetable mix and add a tin of chopped or several chopped fresh tomatoes, parsley, basil and a pinch of salt.
Put the mixture into the aubergine case, top with feta cheese and bake in the oven at 180 degrees for 30/40 minutes and serve.
