I added golden linseed to my salad tonight. Honestly I couldn't really tell they were in there because they're so tiny but seeds are one of those foods that seem to have universal approval as a 'good thing to eat', mostly due to them being a great source of healthy fats. Linseed is packed full of fibre too apparently.

I do like my food to serve a flavour or texture purpose so I'm not sure linseed will become a mainstay of my diet, but maybe I'll try adding them to cereal or yoghurt or a flapjack-style bar.

This is my favourite healthy pasta dish, with tinned tuna, green beans, lemon and chilli flakes. I make it a lot and customise it often.

This time I added chopped up tenderstem broccoli and tinned sweetcorn. This will be just as good cold tomorrow for lunch, I'll probably just add a little more extra virgin olive oil as it usually dries out a little.

The recipe's from the BBC Good Food website but you don't need to keep the portions of pasta and veg the same as in the recipe, if you want more of either or both, just add more olive oil.

Knocked up these healthier blueberry and banana muffins yesterday - made possible by being on leave from work this week and Aldi having bananas and blueberries on offer.

They're healthier because they have relatively little refined sugar (100g) and use light olive oil rather than butter, lard or dripping (mmm, those lard muffins though...). I'm trying to be healthier at the moment so this seemed like a good way to use up some bananas that were on the turn but not derail my efforts.

These muffins aren't mega-sweet - perhaps unsurprisingly - but they are are nice 'n' fruity with a great moist texture thanks to the bananas. Find the recipe on the BBC Good Food website.

Delicious dips! From left to right you're looking at reduced fat hummus (shop bought), melitzanosalata (homemade) and spicy whipped feta (homemade).

If you're thinking, melitzanowhatnow? this is a fantastic Greek dip that is mostly just mashed up roasted aubergine, but given some additional welly with lemon juice, garlic, olive oil and parsley. It's SO good, particularly if you're an aubergine fan 🙋🏼‍♀️ and really good for you - a genuine win-win.

Let me introduce you to my new friend, whipped feta. She's light and frothy but she can have a fiery side too.

In one of my mammoth Googling sessions to get recipe inspiration I stumbled upon ' recipe for whipped feta and tomato bagels and was immediately sold. I love feta (massive shocker for those of you who have seen some of my other posts - this account could be called Nowt Better Than Feta, let's face it) but I also love soft textures in pretty much any food - mashed potato, risotto and a pillowy-soft bread are some of my favourite things to eat.

So I hopped to it. I don't have a proper food processor but I have one of those handheld ones which did the job of combining the feta and 0% fat Greek yoghurt really well. I then stirred in some olive oil and lemon juice but omitted the mint in the original recipe in favour of some chilli flakes to try to mimic the spicy feta dip I've eaten in Greece before.

The result was tangy and mousse-like, with a bit of a chilli kick (although I think I could have added a bit more). I then spooned the cheesy mixture onto toasted bagels and topped with my homegrown cherry tomatoes. Really enjoyable to make and eat, and I have leftover whipped feta which I might use as a dip.

Isn't it great when food tastes good AND good *for you*? This herby quinoa salad with feta, pomegranate seeds, toasted pine nuts and other nice stuff certainly fit that bill.

I overcooked the quinoa so it was a bit stodgy but it was still really moreish. I also added some rocket to up the level of greenery. Recipe from the BBC Good Food website.

Well, this was jolly nice. Mediterranean chickpea stew with spinach and feta, recipe from . The sauce is rich and has a bit of added oomph from cayenne pepper and chilli flakes.

I subbed the cloves in the recipe for a bit of grated nutmeg and added a bit more feta and spinach as I had open packs that needed using up. I then smothered it with shed loads of parsley (second pic) as I also have a lot of that at the moment.

It's pretty substantial as it is but you could mop up the sauce with some pitta bread for a heartier meal. @ Norwich, Norfolk

Passing on the roast chicken with orzo knowledge that I gained from the other day! This was so delicious, the depth of chickeny flavour in the orzo is lip-smackingly good. I had it with courgettes sauteed with garlic and served with a squeeze of lemon juice.

I hope someone else picks up the baton and gives this a whirl (the recipe's on the Waitrose website), it's the kind of dish that should be shared and loved and shared again.

Roasted veg couscous. I make this time and again and it's always so satisfying. This one with aubergine, courgettes, red onion and peppers - red, yellow and padron.

I made a dressing of extra virgin olive oil, chopped garlic, lemon juice and seasoning and poured it over the couscous - not too much though as the veg was drizzled in oil. And I added a large handful of basil leaves at the end.

The best bit is that I made a big batch and this keeps well and is lovely cold, so I have lunches for the next couple of days 👍🏻

🇪🇸 and 🇬🇷 meet on a plate. Turns out they get along like old friends.

I made up this Spanish omelette recipe tonight, which owes a lot to the Greek pie spanokopita. Along with onions and potato, I added wilted spinach, dried oregano and then crumbled feta over the top (all held together with eggs, naturally). I firmed up the top under a medium grill for no more than 10 minutes, the feta had just started to colour and was soft and mellow. Really enjoyable to eat and to cook - I like experimenting in the kitchen. Well, when it works 😁

British spinach is on offer in Aldi at the moment, a massive bag is something like 56p. I got mine about three hours ago, and this idea followed swiftly on.
