Yesterday’s antics!

We had four very eager to learn men in the girly Ballytrim Pantry kitchen!
We did a morning of creative cookery & fun- the gentlemen made a bread, a curry and a rather tasty crispy skinned chicken dish.
I even got them into pantry aprons - I am confident I could still make a sous chef out of them yet!

🥄 This was privately organised but if you had a group of four keen beans get in touch and I would love to do another cookery day for you!

It was such a treat to see everyone collect their food last night in the light! The daffodils are starting to show their faces and it is just lovely!
This morning I have been scaling up the dishes that the men will be cooking in the cookery class I am running on Sunday!
The spices are toasted and the table is set!

On next week’s menu we are going back to a few Pantry classics! Fish pie and mushroom macaroni 🍄‍🟫

An evening of stories and cooking from Nairobi!

When: Wednesday 11th March
Time:7pm - 9pm

Where: Ballytrim Pantry, Killyleagh
This is a ticketed event and places are limited.

During the evening you’ll hear how productive rooftop gardening can be. Using volcanic rock and hydroponics this innovative project is transforming the lives of women and children in the poorest communities.

Last November I went with a team from Christian Aid to visit the urban farming schemes in Kenya. From our trip I will be cooking some recipes that we tasted first hand and you’ll of course get to do plenty of taste testing!!

We have hosted a few of these events over the past year in a variety of different churches across Northern Ireland but this one is extra special!
We will be welcoming Purity Osumba - who works in Kenya coordinating the scheme. She will be able to give us an update on the progress and how the donations we have received so far have been put to use!

This week has been a combination of dodging showers and making comfort food!

Mum has gone to new heights with creating inside jobs! Her flower pots are shining clean and are eagerly anticipating growing season!

I had fun in the kitchen on Friday and made valentines chocolate viennese whirls that my four year old self would appreciate- mum told me not to quit the day job, but I fear it’s too late!

Next week’s menu is again more comfort food! From potato topped pies and beef bourgeon we’ve got you covered!

Yesterday we helped a group of rather wonderful ladies celebrate some big milestone birthdays!

Ballytrim Sawmill put the group to work and they all sanded, personalised and finished their very own food boards!
With the fire roaring and rumbling tummies everyone arrived back into the Pantry for a two course lunch!

A gloriously wet day!
Instead of a soggy dog walk picture I thought I’d share some flowery smiley pictures of our dried flower frame workshop we did at the end of last year.
Mum grew and dried all of the flowers and Will & I attached chicken wire to rather a lot of frames!
It was great fun 😍

A weekend of party games and top hats 🎂

Subconsciously I think I was maybe experiencing social media writing block!
Today we have hosted the most wonderful for the first ever writing retreat here at Ballytrim.
Throughout the day Elizabeth has guided the group through meditative practices to help improve creativity, she has got everyone on their feet to move and groove and most importantly we have created a safe space for these creatives to put pen to paper.

I made a vibrantly fresh lunch for everyone then we went out for a dander to visit the sleeping Walled Garden.

My two takings from today:
If we were going to go to war I’d take these 13 ladies with me!
And secondly I must allow my brain and body to sit in state of calm daily - in the hope to improve my creativity and my calm!

What a day!

And we are back!
Back with a bang! ➡️ for next week’s menu!

I hope you have all had a restful and fun filled festive period and for us, it’s now back to porridge!
There is something quite magical in the frosty morning dog walks wrapped up in every coat I own.
The veg garden is wintering well and our leeks are still fabulous and in a week or two we will be welcoming our first crop of 2026 purple sprouting broccoli!
