Looking for ways to reduce kitchen waste?
Check out this pot of stock from peelings and a duck carcass after Sunday roast.
1) Chuck everything in the same roasting pan used (after discarding/repurposing the excess fat), add salt, herbs, potato/onion/garlic peelings, and maybe any sad veggies you find in the fridge.
2)Then boil boil boil!
3)Check for flavour after it has reduced.
4)Sieve and freeze once it has cooled down.
