F R I T T A T A
I try to make one of these most weeks as they are perfect to reheat for lunch or dinner and pretty quick to pull together.
I use a 9 inch cake tin to make this.
Ingredients
11 eggs
~ 100/200ml milk
At least 4-6 different vegetable. In this recipe I used butternut squash, broccoli, beans, red onion, red pepper and courgettes.
~ 30g feta
Seasoning
Method.
1. Prepare and roast your vegetables into bite size chunks until they are 90% cooked.
2. Mix the eggs and milk together. Set aside.
3. Line your cake tin with grease proof paper.
4. Once the veggies are cooked add them to the cake tin and spread out evenly.
5. Pour the wet ingredients over the vegetables.
6. Cook until the egg is cooked and firmed up.
7. Enjoy x
