Quick, cheap and easy kids dish and only takes as long as the instructions on the pasta packet.
This easily makes 4 portions for a toddler, so freeze the excess and use when you need it.
🥕2 cups whole meal pasta (any shape will do!) cooked to instructions
🥕Grate 1 carrot OR broccoli stem OR cauliflower - anything you have in the fridge and fry in a tbsp water with some chopped onion
🥕 Add a handful of chopped greens. I’ve used spinach
🥕 Add a tbsp pesto / green sauce (this isn’t essential, you can use some mixed herbs and perhaps some chilli flakes for extra flavour)
🥕 Add 3 tbsp passata, use some water from the pasta if you need more sauce.
🥕 Add the cooked pasta and mix together.

I found this great black bean pasta at Aldi. I also got a bit carried away with my food shop this week so have a very well stocked fridge at the moment for fun experimenting with sauces and recipes.
I made a cheesy sauce tonight with avocado, tahini, nutritional yeast, garlic and onion powder then added some lemon juice and seasoning until it was just right! It all took about 7 minutes - perfect for a quick and easy meal.

Cooking vegan food can be quick, easy, and pretty cheap!
I made this curry tonight and it cost just £2.23 a serve (not including the spices which I already had).
It made 4 whole portions, so provides ready made food for the rest of the week.
I put this through Cronometer and each portion has 14.3g protein, less than 500kcal and is a good source of vitamins and minerals. The coconut milk provides quite a lot of fats, so you could swap this for a different plant milk of your choice, although it does make it deliciously creamy.

I have had such a long day today. It started at 5:15 to get up to catch a 6:30 train up to Leeds. In total I travelled for about 6 hours for a 90 minute meeting. 😬
I was so happy to come home and remember I still had soup in the fridge!
I added some nutritional yeast (and a pretty bit of parsley so I could take this pic) and served it with a marmite sandwich.
Easy vegan food!
And now off to bed.... 😴

I love making my food quickly and easily at the end of a days work. I don't want to spend hours shopping, chopping and cooking when I get home on an evening.
These goodie bowls are a perfect quick, healthy, go to meal. I try and keep some prepared quinoa/ lentils in the fridge, so I start with that as a base. You could also use some brown rice or other whole grain or bean.
From there you can add anything. Here I have tomatoes, kale, cucumber, stir fried mushrooms, humous and falafel.
I find I tend to use more raw veg during the summer, but in the winter, I rely on re-heated roasted veg, falafel or quickly stirred veg for some added comfort and warmth.
They're so easy to make you can double the ingredients and have lunch ready for the next day in no time at all.
Another bonus is that you only have one bowl, a knife and a chopping board to wash up - easy!!
