I have a theory about vegetables at the Christmas table.
It’s not that nobody wants to eat veggies at Christmas. It’s just that they’re more neglected than the family middle child.
I get it. Christmas isn’t about hitting your daily fibre intake. But I truly believe veggies can earn their place on the plate if given a bit of work and care. And with all the mince pies, ham, and pudding - your digestion will thank you for adding some greens.
So don’t eat vegetables at Christmas to “eat clean” or “make up for overeating.” Do it because of how it makes you feel.
So here’s a kale recipe for you. It’s got a tahini dressing, which is loaded with healthy fats and packed with flavour.
🥗 For about 4 servings, you’ll need:
200g kale
4 tbsp tahini
2 tbsp oat milk
2 tsp honey or syrup
2 tsp lemon juice
½ tsp garlic powder
2 tsp curry powder
Salt & pepper
Pomegranate seeds
➡️ Cut the kale into smaller pieces. Mix all the ingredients for the tahini dressing and massage it into the kale until it’s well coated. Season to taste and top with gorgeous pomegranate seeds.
