Creamy Chicken and Mushroom Risotto
This recipe is for two using one Healthy Extra Calcium Choice per portion.
3 chicken breasts diced
160g risotto rice
400ml Chicken stock
White wine stock pot
1 tub Charleville Creations Lighter
Mushrooms
Shallots
Peas
1 tsp Garlic granules
1 tsp Onion granules
1 tsp parsley
Fry off the chicken breast. Add your veg. Once softened add seasonings. Add rice and chicken stock. Stir in white wine stock pot and add peas. Turn to a medium heat and babysit. Stir regularly and add water as the rice absorbs the liquid. Once the rice is cooked at the way through, stir in the pot of Charleville and cook on a low heat for a few more minutes. And donβt forget to add the peas, like I did. π€¦π»ββοΈ
