Garlicky (& Herby) Grilled Chicken Salad. By
How we doing?? Iโve been chowing down on this exact combo for lunch and its doesnโt feel like itโs going to get old any time soon. The flavors are so clutch! ๐ฅ๐ฅ . I marinated and a bunch of chicken over the weekend with a ton of fresh garlic, parsley, some lemon, yogurt, and then grilled the whole batch to use throughout the week. Itโs been delicious. Served it up on a big base of lettuce, and along tomatos, onions, olives, and a garlicky sauce. Full warning: this is very garlicky. So you might wanna be ok sleeping alone for the night ๐ .
Here is how I made everything: . 1.First, the chicken. I made a big 2lb batch with chicken from . I pat these down with a paper towel, put them in a large glass container, then added 5-6 cloves of finely minced fresh garlic, 2 handfuls of finely chopped parsley, drizzled a coupled tablespoons of olive oil, added salt, pepper, garlic powder, two tablespoons of a tart Greek yogurt, and juice of half a lemon. . 2.Optional, but I also added 1 tsp or so of turmeric to help minimize the odor from the chicken and add a subtle flavor. . 3.Massage well and marinate for 4-8 hours. . 4.Grilled it up on a charcoal grill, though you can also do these in a cast iron pan or bake in the oven. But a charcoal grill does wonders. . 5.Stores in the fridge well all week. Iโve been using it for different stuff all week. To make this Mediterranean bowl, I started with a big base of lettuce, added some fresh local tomatos, black olives, red onion, pine nuts, and a nice spoonful of sauce. So good . This garlic & parsley marinate is one of my favorites and never disappoints. Such an easy way to upgrade chicken and add a ton of flavor. What are some of your favorite marinade flavors?
