Garlicky (& Herby) Grilled Chicken Salad. By

How we doing?? Iโ€™ve been chowing down on this exact combo for lunch and its doesnโ€™t feel like itโ€™s going to get old any time soon. The flavors are so clutch! ๐Ÿ’ฅ๐Ÿ’ฅ . I marinated and a bunch of chicken over the weekend with a ton of fresh garlic, parsley, some lemon, yogurt, and then grilled the whole batch to use throughout the week. Itโ€™s been delicious. Served it up on a big base of lettuce, and along tomatos, onions, olives, and a garlicky sauce. Full warning: this is very garlicky. So you might wanna be ok sleeping alone for the night ๐Ÿ˜‚ .

Here is how I made everything: . 1.First, the chicken. I made a big 2lb batch with chicken from . I pat these down with a paper towel, put them in a large glass container, then added 5-6 cloves of finely minced fresh garlic, 2 handfuls of finely chopped parsley, drizzled a coupled tablespoons of olive oil, added salt, pepper, garlic powder, two tablespoons of a tart Greek yogurt, and juice of half a lemon. . 2.Optional, but I also added 1 tsp or so of turmeric to help minimize the odor from the chicken and add a subtle flavor. . 3.Massage well and marinate for 4-8 hours. . 4.Grilled it up on a charcoal grill, though you can also do these in a cast iron pan or bake in the oven. But a charcoal grill does wonders. . 5.Stores in the fridge well all week. Iโ€™ve been using it for different stuff all week. To make this Mediterranean bowl, I started with a big base of lettuce, added some fresh local tomatos, black olives, red onion, pine nuts, and a nice spoonful of sauce. So good . This garlic & parsley marinate is one of my favorites and never disappoints. Such an easy way to upgrade chicken and add a ton of flavor. What are some of your favorite marinade flavors?

Ingredients
for 2 servings๐Ÿง€
* 1 head cauliflower
* 1 pinch salt
* 2 eggs
* ยฝ cup vegetarian parmesan cheese, grated (55 g)
* ยผ cup fresh basil, chopped (10 g)
* 1 teaspoon garlic powder
* 1 teaspoon dried oregano
* ยฝ teaspoon red pepper flakes
* cheese, of your choice
* additional topping, of your choice ๐ŸฅชPreparation๐Ÿฅช
* Grate a cauliflower over a large bowl.
* Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes.
* Pour the cauliflower into a clean kitchen towel and wring the water out.
* In a large bowl, combine the cauliflower, and remaining ingredients, (except your cheese and toppings) stir until well mixed.
* Using a spoon transfer two hearty scoops of mixture to form each โ€œbread sliceโ€ onto a skillet on medium-low heat for about 10 minutes, each side.
* Add your cheese and any other toppings, allow a couple minutes for cheese to melt.

PECAN, CAJUN CHICKEN & MISO BALSAMIC SALAD!๐Ÿฅ—๐Ÿฅ‘๐Ÿ”ฅcomplete with creamy crumbled feta, thinly sliced red onions, avocado and mixed greens! Miso paste and balsamic blend so well together and add depth and variety to the classic balsamic vinaigrette. Grab the recipe deets below!๐Ÿ‘‡๐Ÿป๐Ÿ‘‡๐Ÿป
Homemade Balsamic Vinaigrette:
pinch of sea salt
pinch of ground pepper
1/4 cup good quality red balsamic vinegar
3/4 cup extra virgin olive oil
2-3 finely minced garlic cloves (optional)
2 Tbsp of red miso paste
1 Tbsp of sliced, green onions
1 Tsp of agave or honey
1 Tsp of grated ginger
1 Tbsp of red chilli flakes

For the chicken, I used organic rotisserie chicken and this salad goes really well with lemon & herb or Cajun flavors. Super simple and super satisfying!

Spinach Mushroom Pesto Spaghetti &

INGREDIENTS (for 4 serving
1 tablespoon canola oil
5 0z spinach (140 g)
2 cups mushroom (150 g), sliced
1 teaspoon salt
1 teaspoon pepper
1 cup pesto (225 g)
Va cup parmesan cheese (110g)
a b spaghetti (225 g, cooked
PREPARATION
1. Heat pot over meduum-high heat.
2. Add oil to the pot.
3. Cook the spinach until wilted.
4. Add the mushrooms, salt, and pepper cooking until most
of the water is gone.
5. Add the pesto and parmesan.
6. Add the spaghetti, and toss until evenly coated, with the
sauce sticking to the noodles.
7 Serve and enjoy!

Friends, do you have a go-to recipe for low carb homemade meatballs? If not, save this one. Theyโ€™re full of flavor and easy to make. They also reheat well making them perfect for

Ingredients
* 1 pound ground beef, 80/20
* 1/4 cup Parmesan cheese, grated
* 1 large egg, beaten
* 2 tablespoons finely grated onion
* 1-2 tablespoons minced garlic,
* 1/2 tsp salt
* 1/4 tsp pepper
* 1 tablespoon Italian seasoning
* 1-2 tablespoons almond flour (add flour depending on wetness of mixture)
* Mozzarella Cheese (however much ya like!)
Sauce
* 1.5 cups low sugar spaghetti sauce (I like using Marinara Sauce)

Instructions
* Add the beef to a medium bowl and the remaining ingredients to the meat and combine all the ingredients together by hand until evenly combined.

* Roll meatballs into golf ball size balls. Each meatball should be around 1 ounce.
โ €
* Bake in oven at 400 degrees for 15 minutes. Top with mozzarella cheese and bake to melt the cheese for an additional 5-7 mins.

Makes 8-10 meatballs (depending on size) at 1 net carb for each serving of 3 meatballs. With Raosโ€™s sauce it's 4 net carbs per serving.ย

Greek salad: In a bowl, mix 1 cup chopped cherry tomatoes, 1 cucumber chopped, ยฝ red onion chopped + 1 can drained chickpeas, 1 tablespoon fresh parsley, freshly squeezed lemon + Greek dressing, salt and pepper. Optional: add feta & kalamata olives.โฃ
