The bartering system is alive and kicking in Dublin. Our neighbour has a beautiful fig tree in her garden and we have a couple of lovely apple trees, 8 figs = 1 bag of apples, everyone's a winner!

Enjoy fresh, or add a dollop of natural probiotic yoghurt, a drizzle of honey and few crushed walnuts for extra protein and you've got yourself a nutritious and delicious breakfast or dessert.

If you’re at a loose end this weekend don’t forget to check out the vitality expo being held in the RDS. It’s all set to be a fun couple of days with fantastic guest speakers, food/cookery demos, yoga classes and much much more.

I’m going to be working on stands with Dr. Marilyn Glenville (B34), Patrick Holford (B33) and The Natural Health Practice (C31). So make sure you come along and say hi, and perhaps have a go on the body composition and iheart monitors whilst you’re there.

I had the pleasure of staying in Vale de Moses for a week in October it was absolutely fantastic, really relaxing, the owners and staff are so welcoming and extremely helpful. All the treatments I had were top notch and I felt amazing afterwards. I can't recommend it enough for anyone who needs a break from the hustle and bustle of everyday life xx p.s. While our polytunnel and veg patch have taken a back seat this year, Pete and I made a promise this summer to make the most of any food that was brave enough to grow in our garden. We have three apple trees, two huge rosehip bushes, some damsons donated by Petes mum and more nettle patches than we care to admit!

As you can imagine we had a challenge on our hands as well as a whole lot of apples. We didn't want to spend the entire winter eating our way through apple pies, as delicious as that sounds, so we began to consider other possibilities.

With a little help from cooking gurus like the gang at River Cottage HQ, Jamie Oliver, Wholefoods Market and BBC good food, as well as a spending a day at the fantastic Irish Seed Savers in Co.Clare completing a wild food foraging course, (me), and a cider making course, (Pete), we were all set!

This is what we've ended up with; 18 litres of cider, 2 jars of damson gin, 8 large jars of apple and chilli chutney, 5 large jars of crab apple and rose hip jelly, 4 large jars of apple and ginger sauce, 6 litres of apple cider vinegar, (this was actually a happy mistake one of Pete's cider batches went sour...well a happy mistake for me, he wasn't quite as positive about it!), 5 litres of nettle beer, (Pete), or champagne, (me), depending on how fancy you're feeling, 2 large bags of apples were given to friends and family and we still have a medium box left to be transformed into a yummy treat, maybe a pie or two or three are on the cards after all! There are still a couple of big, beautiful and stubborn specimens clinging bravely to the top of one tree way out of reach for us but the resident magpies seem to be enjoying themselves.

I have attached some pictures as proof for all you doubters out there but as you can see we had a bumper crop from mother nature this year with very little effort on our part...now we just have to start eating and drinking our way through it...might have to call in some reinforcements ###

If you fancy adding a summer twist to your sarnies this year try this delicious combo from the fantastic chefs at River Cottage HQ, strawberry sandwiches are where it's at in 2016! We tried our own version the other day using organic toasted spelt bread, natural Greek yoghurt, seasonal strawberries and mint from the garden, add a drizzle of honey for extra sweetness then sit back and enjoy this taste sensation... My husband and I recently celebrated our 3rd wedding anniversary with a stay at the Brook Lodge Hotel in Wicklow and a meal at their organic restaurant The Strawberry Tree. We ordered their 9 course taster menu which included foods such as squid ink crackers, scurvy grass with bacon foam, crispy duck eggs, rose hip and wild berry smoothie etc. finished off with a chocolate plate with the words happy anniversary, nice personal touch! And a visit to their pantry to choose from a range of cheeses and homemade chutneys. Absolutely delicious and beautifully presented as you can see from the photos below. Definitely worth a visit for all you foodies out there!
