A major new international campaign has launched to promote the widespread use of vitamin C wherever there is a raised risk of COVID-19 infection, as well as an additional treatment for those seriously infected.

The launch of vitaminC4covid.com follows the publication of a major review of over 100 trials of the vitamin and the virus, which found that vitamin C could save the lives of those badly infected with COVID-19 and make the symptoms of milder infections less severe The authors include several senior experts in intensive care.

Already 20 medical and nutritional organizations from 49 countries worldwide are supporting the campaign. Over 5000 doctors, nutritionists, health scientists and members of the public have also signed up to support vitaminC4covid.com.

VEGETARIAN COURGETTE PASTA

Serves 2
Equipment: Use a spiriliser as seen in photo*

1/2 clove of garlic
4 courgettes
60g mushrooms
1 tablespoon of semi-skimmed milk or nutmilk
20g of low fat cottage cheese
1 pinch of nutmeg
1 pinch of black pepper
½ small onion, chopped
1 tsp of olive oil

Heat the oil in a non-stick frying pan and gently cook the onion and garlic until soft. Spirilise courgettes to make spaghetti and add mushrooms, mixing well together.
Cook the vegetables gently, stirring occasionally, for about 10 minutes.
Whisk the skimmed milk into the cottage cheese, then add the courgette and mushroom mixture with the nutmeg.
Serve with a delicious green juice. Try out my Green Goddess it can be purchased in Cornucopia Restaurant.

Raw redskin peanuts are a great source of protein and they also contain resveratrol which is an antioxidant that helps protect your body from obesity and diabetes. Toxins build up in your body when you do hardcore workouts and weight training. They are an excellent food for sports people and bodybuilders! Here is a little quick protein snack!
Mix 3 egg whites
2 teaspoons unsweetened peanut butter
pinch of cinnamon
mix and beat together
Pan fry like a pancake.
Serve with blueberries and raw cocoa nibs

Did you know that if you keep parsnips in the refrigerator they retain more nutrients than at room temperature?

Parsnips are high in potassium, B vitamins, vitamin E and minerals such as silica, fibre. Potassium is great for people with high blood pressure as it helps decrease the blood pressure. Vitamin E is needed to help keep us looking and feeling young. Vitamin E can help against sun damage. Silica is know to strengthen the skin and connective tissues.
Parsnips are delicious when you roast them in the oven or mashed with carrots.
