Creamy Enchiladas, Glucose-Friendly Style 🍅🌶️

Oh, how I love Latin comfort food - it just fills me with yum! I know what you’re thinking: just looking at this will spike my glucose!!

Growing up, food was the heart of our family in gatherings, parties and holidays. With diabetes, I had to learn to adapt my fav foods so I could enjoy them without the glucose rollercoaster.

After my diagnosis, I restricted myself from food to try and get a grasp on diabetes.

Over time, I realised I didn’t have to give up the foods I love - I just had to make a few mindful swaps.

For these creamy enchiladas (my grandma’s recipe ❤️), here’s what I do differently:

✔️ Swap heavy cream for unsweetened soy milk - it’s lower in sat fat and carbs keeping post-meal glucose more stable.
✔️ Swap white tortillas for wholemeal tortillas = more fibre = slower digestion and a gentler glucose rise.
✔️Add extra vegetables for fibre to help stabilise blood glucose.
✔️Try different fillings like spinach and black beans to reduce overall fat and increase fibre.

Little changes, still delicious comfort food.

A Diabetes Surf Day on the Wild Atlantic Way

This May, come surf, stretch, eat, and connect with the diabetes community in Lahinch, Co Clare 🌊

We’ll kick off the morning in the waves, warm up in the sauna, refuel with a glucose-friendly lunch (carb counted, of course!), and wind down with yoga and chats.

With diabetes support throughout the day (I’ve got the jellies covered), this is all about confidence, connection, and doing fun stuff with diabetes.

You made it past Blue Monday, and January is already freakin hard without diabetes. Add T1D into the mix and it can feel heavy - mentally, emotionally, and physically.

So today, pause and check in with yourself. What support do you need right now? What do you need to prevent burnout?

Maybe it’s a good scream or cry. Maybe it’s you-time in a bubble bath, a walk in nature, or just slowing down.

Take diabetes day by day. Don’t let yesterday, last week, or even last month’s management weigh you down. You’re still showing up and that matters. 💙

You CAN enjoy Christmas Treats with type one diabetes! Knowing the carb count on your fav treats helps you bolus more accurately and avoid those glucose spikes.

So here’s a quick guide to some classic Christmas desserts (based on typical serving sizes):

🍪 Gingerbread Man (medium, ~40g): ~20-25g carbs
🥧 Mince Pie (standard, ~60g): ~40-45g carbs
🍰 Cheesecake (1 slice, ~100g): ~25-30g carbs
🍨 Trifle (1 serving, ~150g): ~30-40g carbs
🍎 Apple Tart/Pie (1 slice, ~120g): ~35-45g carbs
🎂 Christmas Cake (with icing, 1 slice, ~80g): ~55-65g carbs

🚨Any extras like fondant icing, glazes, powdered sugar, dried fruit or ice cream will add to the carb count. So don’t forget to factor this into your bolus.

Have you ever thought of T1D life like ridding a Ferris wheel 🎡!!??

Round and round you go.
Each turn brings something new - a challenge, a heaviness, a worry…
But also a tool, a lesson, a support, a person who helps you keep going.

Between the chaos of getting our house extension ready for Christmas and soaking up the magic at my favourite place the Galway Christmas Market, this thought landed with me.

Diabetes isn’t always wild rollercoaster highs and lows. Sometimes it’s circular. Repetitive. Ongoing.

And during Christmas It can feel extra overwhelming🎄‼️

The parties.
The sweets and treats.
The blood sugar uncertainty.
The mental load no one else sees.

But instead of building walls this season, what if you picked things up along the way?

If you’re looking for a lower sugar festive treat - I got you covered chocolate 🍫🍓

I’m resharing this Christmas dark chocolate bark because it’s easy to make, looks super festive and is glucose friendly.

Adding in roasted pistachios and freeze dried unsweetened berries packs it with a bit of protein and fibre, making it better for your glucose levels.

And you can make it in less than 15 minutes. It’s perfect for a guilt-free nibbling, colourful DIY Christmas gift or party treat.

🍫Pistachio + Raspberry Dar Chocolate Bark🎄

Carb info: 12 servings, about 10g carbs per piece

Ingredients:
• 250g 70% dark chocolate (better quality =better taste)
• 10g (1/2 cup) freeze-dried raspberries - I used .miklas no sugar added berries
• 2 tablespoons chopped pistachios
• Optional: 1 teaspoon coconut oil (for smoother chocolate melting)
• Optional: A pinch of sea salt

Instructions:

Melt the chocolate (add coconut oil if you like) and spread it on a lined tray. Sprinkle the raspberries, pistachios, and sea salt on top. Let it set in the fridge for 30 minutes, then break into pieces.

Have you ever had one of those serendipitous moments? How about a diaserendipitous moment!?

I had one last night at Thanksgiving dinner. We sat next to a couple who were travelling through Ireland, and the husband started chatting about how they were going to a sporting event that was sponsored by a diabetes tech company.

Then he said something like, “I really want to go up because I have this tech…” and he lifted his shirt slightly to show his insulin pump.

And I said, “Wait — me too.”

I showed him mine… (don’t get too excited now 😆) and we had the exact same pump.

Out of all the people we could have been seated beside with a lot of people packed into a pub for a thanksgiving feast… it was them. Two strangers connected by one invisible thread: diabetes.

Me 10 years ago wouldn’t have had this moment.
I would have been hiding my pump.
I would have been covering my sensor.
I would have been anxious someone might see it or ask me about it.

I carried so much shame then. So much fear of being “seen.”

But over the years, finding my voice, growing in acceptance, and allowing myself to be more open about my diabetes has changed everything.

Moments like this remind me how powerful it is when we stop hiding.

When we own our story. When we let ourselves be part of the diabetes community instead of quietly surviving it.

Connection happens when we let ourselves be seen.
