When a 7 year old requests vegan chicken nuggets...challenge accepted! These were super simple to pull together, super cheap (less than €1 for 8!) and super tasty!
1 tin of chickpeas
1 courgette, peeled
3 tbsp nutritional yeast
1 tsp salt
1 tsp paprika
1 flax egg (mix 1tbsp flaxseed with 3tbsp water and leave for 5 mins)
1 slice wholemeal bread
Make breadcrumbs with the bread and set aside 3/4 of the mix. Leave the rest in the blender and add the rest of the ingredients. Blend until mixed. Form into shapes and roll in breadcrumbs. Bake at 200C for 20 mins, then flip and bake for another 10.

My favourite slide from the Irish Nutrition and Dietetic Institutes event on “Keeping nutrition at the core of sustainable diets”..particularly point 5. “Repeat until #3 is pretty f___ing unlikely” 😉😆
This emphasises the importance of only taking nutrition advice from qualified and registered professionals! You wouldn’t amputate your foot if a google search told you the pain probably meant it was gangrene...so don’t ever eliminate major food groups from your diet, resulting in the removal of vital essential nutrients, just because someone who has never studied nutrition recommended it either! We all have unique metabolic reactions to food, so if you’re experiencing any food related health issues, please seek professional advice before making drastic dietary changes ☺️
