Right, I’ve finally done it — I’ve filmed myself making Chocolate Seed Soldiers by the wonderful
The recipe I keep banging on about :-)

Full disclosure:

I am not a natural in front of the camera.

The sound is… let’s call it “rustic”

And at one point I confidently said bain-de-marie 🙈

But — I’m posting it anyway, because these bars are too good not to share and if I wait for “perfect” you’ll see this video sometime around 2041.

These tick all the boxes for me. Nutritious & tasty & easy to make.
Everything just gets bunged into the food processor
And since discovering Chicory Root Syrup by  — they’re even less sweet and feel really clean.

Top tip: once made → keep them in the freezer.

All the ingredients I use are from in Raheny — gorgeous little shop where I bring my own jars to get all my organic ingredients.

1 cup of milled sunflower and pumpkin seeds

½ cup of maple syrup (not honey) - I explore losing less and less each time I make them and recently using Chicory Root Syrup

½ cup of coconut flour

½ cup of cashew nut butter (or your favourite nut butter)

Generous flakes of sea salt

3 tblsps raw cacao nibs

2 tblsps goji berries

1 cup of dates, chopped

75% dark chocolate OR (½ cup of cacao powder, 6 tblsps coconut oil to make your own)

Method:

Step One : In a food processor, combine everything except the dark chocolate & decorative goji berries. Spread it out over a parchment-lined shallow tin – the perfect size is 20 x 25cm. Place another piece of parchment on top of the base mixture, pressing down firmly. Once the base is smooth, you can ditch the top parchment. Chill in the fridge.
Step Two : Meanwhile, slowly melt the chocolate in a bain-marie. The contents of the bowl will gently melt from the steam of the water underneath. 
Step Three : Smother the chilled base in melted chocolate, and parachute a couple of goji berries on top for colour. Refrigerate overnight.

I’ve been very quiet on here lately… we’ve been busy celebrating our 50ths — and milking it, really 🥳

A few years ago, Alan and I talked about what we’d love to do for our 50th birthdays. I said I’d love to treat the family to a week somewhere lovely, and we decided on Quinta do Lago. Then Alan pipes up - “Fancy cycling to it?”
Ya wha?! 😂

Fast forward a few days and we’re actually planning it. We even put it out to my brothers… and two said yes! 🙌

We flew into Lisbon, cycled to the train, took the train to Entroncamento, then cycled to Abrantes to join the N2 and head south to the Algarve. Day one was a bit of a slog — Luna Hotel Abrantes is on top of a hill, and we arrived in the pitch dark after our plane had to divert back to Cork. But a few beers and good food sorted that out 🍻

The rest of the trip was just magic — perfect weather, gorgeous roads, polite drivers, delicious food, and all our accommodation spots were unreal. I planned it all with my trusty Google Sheets (naturally 😅), while Alan handled the cycling routes.

Rolling into Quinta do Lago on our bikes was hilarious — first time Golden Triangle Properties had guests arrive that way, I’d say! 🚴‍♀️✨

Once the family arrived, the celebrations began — and what a week it was. Amazing food (so many good “chefs” in the family), swims, runs, padel, sunshine, and lots of laughter. Mostly though, we made memories that will stay with us forever 💛

And honestly, it felt like the villa was free — we’d been saving for two years with a Revolut wallet. Best idea ever!

Back home, I thought the fun was over… but Alan had two surprise celebrations lined up for me 🥹

First, drinks with my pals in the lovely Coopers followed by Pebble Beach, and then what I thought was “pizza in town” turned out to be my family in Nearys, followed by La Cave and Kehoes.

I am officially partied out. Now… back to reality 😅💫

Enoy the midterm break — then let’s get back to it 💪

Starting Monday 3rd November, I’m running 4 weeks of online morning classes focused on strength and consistency.

💪 Monday – Pure Weights
🔥 Thursday – Weights with HIIT-style infusions
🧘‍♀️ Friday – Yoga + optional Breathwork & Meditation (from 7am)

All classes are live at 7:15am, and if you miss one, you can catch up anytime in my Member Portal where you have lots if classes to choose from.

The dark, cold mornings are coming — get your workout done first thing, so even if you don’t get out again, you’ve already done something great for yourself.
Strength is everything.

✨ New Term of Online Classes – Starts Tues 23rd Sept at 7:15am! ✨

I’m heading off on holidays soon 🚴‍♀️☀️ but wanted to let you know that the next term of online classes is now open for booking.

Here’s the line-up for next term:

✅ Tuesdays – Pure Weights (build strength, feel powerful)

✅ Wednesdays – Yoga + optional 15 mins Breathwork & Meditation at 7am (for calm, clarity & balance)

✅ Thursdays – Weights with HIIT-style Infusers (a mix of strength & short bursts of cardio 🔥)

All classes are 30 mins – short, effective, and perfect to slot into your morning routine.

And don’t forget – you’ll also get access to my library of recorded classes so you can move anytime that suits you.

This morning’s Active Retired classes ended in the sweetest surprise 💕 The wonderful Adrienne baked a homemade cake, I got a gorgeous present from the girls, and the gang sang me Happy Birthday. Even though it’s not until October, they knew today was the last class of the summer term, and that I’ll be away in September celebrating my (and Alan’s!) joint 50th.

I honestly can’t thank them all enough – Adrienne for her thoughtfulness and everyone for their support, energy, and smiles throughout the summer. I’ve said it before, but teaching these classes is such a joy. Looking down from the stage and seeing the effort, laughter, and friendship just warms my heart every single week.

Now for a few weeks break 🍷🌞🕺🚴‍♂️😎🌸🚲🍷 but I’ll be back with for more fun on the 23rd September! 🥰

✨ Prepping for my 50th ✨

My husband Alan & I have our big birthday holiday in September, and I want to feel my best for it. Truth is, I’ve put on some weight recently. People often think that because I’m so active, I don’t need to worry about it — but that’s not true. Abs (and energy!) are made in the kitchen.

I had blood tests done recently that confirmed (again) I’m post-menopausal, and this time I feel it. The tiredness, the weight gain, the sugar cravings… all of it. I’ve realised I’m an emotional eater — when I’m tired, I don't get a proper healthy shop done, I don’t cook healthily and as a result I reach for rubbish food, even though I know better.

A few days ago I gave myself a little pep talk. My goal isn’t just to lose the extra weight, it’s to feel energised again. Because when you’ve got energy, everything feels easier.

I’m sharing my full reset plan — including what I am eating, my top priorities (protein, steps, sleep, water), and how I’m taming my sugar monster 🍫 — over on my blog.
