Love these pancakes SW friendly , gluten-free and so delicious handy to put together so no fuss 🙂💗 I always crave something sweet for breakfast so keeping myself on track I add fruit, yougurt and some sticky toffee pudding syrup from and a TSP of biscuit spread at 2 syns 🙂💗

💗Mash the banana
💗Add eggs mix everything up
💗Add a little vanilla extract
💗In to the pan
💗flip over when bubbles start
💗On to a plate add your fruit or whatever you like

Dinner tonight was so good.. when your making food from fresh it does take a bit longer but so worth it 😊

Ingredients
Gluten free pasta
Lean mince
1 Onion
1/2 bag of frozen peppers
1 vegetable stock cube
Sprinkle Garlic granules
Sprinkle Chilli powder ( optional)
Sprinkle All season powder
1 tin if chopped tomatoes
1 cup of passata sauce
Spray light
Mozeralla (HEX A)

Method
Put onions, peppers in to a pan with spray light then add all the spices
Add mince
Add stock cube
let it cook until mince is browned
Add tin of chopped tomatoes
Add passata
When it's nearly cooked put on your pasta to cook
Put it in layers in dish I used small lasagne dishes add cheese on top and enjoy 😊😊💗

I would love if you all could tune in to TG4 on Sunday at 8.30.... Myself, Annette Duffy, Cindy Quinn and Marie Breslin have taken part in a show called "Realta agus Geolta". The show was in the search for Ireland most talented families. We will be appearing as the " Muintir Uí Chuinn" The Quinn Family. It was a very exciting time for us all and we were proud to be representing our County. We hope you all tune in 😄

My meals for today we're all fab. Although dinner was the nicest meal as I had an meal from it's my favorite one of them all so far 😊 it's so filling and you get a lunch out of it too with rice for the next day just pop it in the microwave. I went over my Syns for today but I know I'll do better tomorrow 🙈☺️ when it's my time of the month I crave sweet stuff and I have it because I know if I don't then it could get worst 🤣 but I've been good up until today so here's to a new day tomorrow d getting back on track ☺️

Today's lunch chicken 1/2 syn , taco/sweet chilli 2 syns, tomatoes, lettuce, beetroot, 1 triangle light cheese, scallions and of course homemade chips all free 🙌❣️ it's good being on track . 2.5lbs down this week and that's 7lbs down now .wee man is 7 months so not doing so bad ..plus having a thread mill in the house for these were days is just what I needed..here's to feeling even better than I already do 😄❣️ ❤️
