Have you ever tried vada and sambar? This is a popular South Indian dish that is served for breakfast and it is both gluten-free and veggie. A vada is a savory and flavorful fried lentil cake. Sambar is a thick stew made of lots of spices, lentils, and veggies. For this meal the sambar was poured on top of the vada and served with a side of coconut chutney. Swipe for a close up!

It’s no surprise that I love my dosas! I’ve been eating my weight in dosas (and let’s be honest, all the Indian food) for the past couple of weeks but I’ve been slacking on the food photos 🙈. So here’s a pic of a giant masala dosa! We stopped in Singapore for a mini-vacay on our way to India and while I was a bit nervous about finding food I could eat, I was comforted by the fact that South Indian food was so easy to find, due to it being a naturally gluten-free and vegetarian cuisine.

✨New recipe! This instant pot saag tofu is one of my go-to recipes to meal prep and is a dairy-free version of the popular Indian dish called saag paneer. I absolutely love it because it’s such a great way to get my greens in without having to eat a salad 😬. Chia pudding!!! For me, breakfast is an absolute must. And I love low maintenance breakfasts that can be prepped in advance so I have something to grab and go on my way to work. And chia pudding is the perfect healthy option. AND I’ve been making my own almond milk (using nut milk bag!) for this and it is a game changer - it makes the chia pudding taste so much more delicious and thick!
Here’s how I typically prep it:
Soak 3 tbsp chia seeds, along with a handful of blueberries and walnuts, in 3/4 cup almond milk overnight. In the morning, top with more blueberries, pomegranate arils, and an optional drizzle of raw honey. Enjoy!

When I introduce bakasana (crow pose) in class, I get a variety of reactions. Some positive, some negative. The negative ones intrigue me - they sound something like “what? I can’t do that” or “nope. Not even going to try.” But my question is: why even set that limitation before attempting?

Celery juice: yay or nay? I know it’s a huge thing right now so I decided to make it using my nut milk bag. I’ve always been a fan of green juice but had never made a juice out of literally one vegetable. The verdict: it tasted like liquid celery, which I liked. The hubs on the other hand, was not the biggest fan. This weekend I’m planning on making it again but will add a couple of additional veggies to enhance the flavor a bit.
Juicer-less celery juice recipe: wash and cut 1 bunch of celery and place in blender. Blend until smooth and strain into a pitcher using Ellie's Best nut milk bag.

Aloo tikki chaat! aka deliciousness on a plate. Chaat is a term for Indian snacks that include a variety of textures along with savory/sweet/tangy/spicy flavors. There are lots of different types of chaat but I made this particular version which includes aloo tikki, or spiced potato patties.
I made these patties by boiling potatoes, and then mashing them with salt/pepper/turmeric/garam masala/chaat masala/ginger/garlic/corn meal. I pan-fried these until crispy, then topped the potato patties with tomatoes, red onions, homemade cucumber raita (cumin-spiced yogurt with cucumber), tamarind chutney, mint chutney, fresh cilantro, and sev (crispy chickpea flour sticks). I literally can’t wait to eat this for dinner again tonight 😋. Happy Tuesday!
