Zucchini Fritters 💁🏻♀️
Zucchini is the essentially a flavourless vegetable, but when paired with the right ingredients, it can do wonders.
Not to forget- it’s low on carb 😎
🍴Fritters are quick and easy to prepare
1. Grate the zucchini (remove the excess water)
2. Add carrot, corns or any vegetable of your choice.
3. Add oat flour for some soluble fiber and eggs (for binding)
4. Seasonings- garlic, salt, black pepper
5. Either bake or pan sear or air fry on both sides until golden brown
6. Serve with yogurt dip- add chopped garlic and mint leaves along with salt pepper to your dip.
