Moringa or Drumstick trees are abundant in Maharashtra. In Kerala, we eat the tender leaves that are made with grated coconut or with dal, again with coconut added, perhaps to also counter the ushna effect. Again, eaten much only during the monsoon season. The fresh and tender leaves can be used to make great teplas.

In Africa, Moringa oleifera is called 'Nebedaye', meaning 'never die' as it helps fight malnutrition and diseases caused by bad water, bad food and environmental toxins which are so rampant in certain African communities.
Various government bodies and NGOs promote Moringa as a superfood to combat malnutrition in developing tropical countries. Moringa is not just an important food source in under-developed or developing countries; it is also a wonderful natural source of optimum nutrition at a low price for those in developed countries where the modern-day diets are making us all sick and unhealthy.
The leaves of the Moringa is an excellent whole-food source of vitamin A, B complex, E, calcium, iron, chlorophyll, various antioxidants and protein including ALL essential amino acids that are not produced by our body and yet are required for human protein synthesis.
Fresh Moringa leaves contain 80-85% moisture; when these leaves are freeze-dried, the removal of water content concentrates the nutrients. It takes 250kg of Moringa Leaves to produce just 37kg (approx) of Moringa Leaf Powder in the freeze-drying process. Hence, one tablespoon of Moringa leaf powder equals 7 tablespoons of fresh Moringa leaves. You are getting one large dose of nutrition just with 1 teaspoon of freeze-dried Moringa leaf powder.
Now I am talking freeze dried moringa here. All the nutrients are intact. Besides, we can have exciting ways of incorporating this great food into our daily regime by adding it to the foods we consume. Perhaps, even making the unhealthy foods healthy. How about adding to the pani Puri water? Can be added to paratha or thepla, or even dhokla. And in dal. Even in yoghurt and buttermilk. Making a pizza at home? Sprinkle some freeze dried moringa powder over it. Pasta with moringa is also a great idea. Aloo chat with moringa sounds nice. Some Thai curry with coconut milk and moringa powder added with love and finesse.
The thing about freeze dried food is that the flavor is regained once it is rehydrated. I had moringa idli and dosa today. It was awesome.
