β In a large mixing bowl, combine rice flour, semolina, chopped dry fruits, grated coconut, ground flaxseed, baking soda, vanilla extract and salt. Mix well.
β Gradually add buttermilk (or yogurt-water mixture) to the mixture.
β Stir continuously to form a smooth batter with a pouring consistency.
β Let the batter rest for 20-30 minutes to allow it to ferment slightly.
β Heat a paniyaram pan (paniyarakkal) over medium heat.
β Add a few drops of ghee or oil into each mold, ensuring they are evenly coated.
β Pour a spoonful of the batter into each mold, filling them upto three-fourths full.
β Cook the paniyarams on medium-low heat, flip them and continue cooking until both sides are evenly cooked and golden brown.
β Serve hot as a delightful breakfast or snack or dessert.
