We are excited to share that NUSEUM is now collaborating with the University of New South Wales on a Future of Work practicum project focused on AI driven precision nutrition and Food-as-Medicine for longevity. UNSW is one of the leading universities in the Asia Pacific region, with a strong track record in business, technology, and health innovation, and we are honored to work with their outstanding students and academic team.

Through this collaboration, a multidisciplinary student team from UNSW will work on market and user research for NUSEUM DOCENT in Australia, exploring how AI powered nutrition can be integrated into everyday life, digital health journeys, and the broader healthcare ecosystem in Sydney and beyond. I logged today’s lunch — a simple toasted sandwich with veggies on the side — just to see what the breakdown actually looked like.

And it turned out to be one of those meals that looks balanced but behaves a little differently once you take it apart.

Here’s what the analysis revealed:

✔ Protein: moderate, mostly from the chicken/turkey filling
✔ Carbs: higher than expected — the toast + chips make up the majority
✔ Fat: coming primarily from the chips and the toasted bread
