Back at it again with a great recipe. This time with seafood. Try our awesome Tomato Mackerel!

4 pre-boned and sliced mackerel fillets
3 table spoon of extra virgin olive oil
2 limes juiced
3 sliced lemon wedges
5 chopped garlic cloves
4 cored and seeded tomatoes cut into dice
1 large spring onion chopped
3 teaspoon of ground black pepper

1. Preheat the oven to 150-160°C
2. Prepare a baking dish and pre-oil the dish before placing the mackerel fillets, when ready, place the fillets in the dish
3. Put extra virgin olive oil, lime juice, garlic cloves, diced tomatoes in a separate bowl and whisk.
4. Pour the mixed sauce over the fish. Then bake it for 25 to 30 minutes.
5. When the Mackerel is cooked, sprinkle some chopped spring onions and serve with lemon wedges to your liking
