INGREDIENTS🌱🥗🌻
FOR THE SAUCE:
1 (14-oz.) can diced tomatoes
1 tbsp. apple cider vinegar
1/2 tsp. red pepper flakes
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
1/4 c. extra-virgin olive oil
FOR THE CABBAGE ROLLS:
12 cabbage leaves
1 lb. ground beef
3/4 lb. ground pork
1 c. riced cauliflower
3 green onions, thinly sliced
1/4 c. chopped parsley, plus more for serving
Freshly ground black pepper

DIRECTIONS
FOR THE SAUCE:
Preheat oven to 375°. Puree tomatoes, apple cider vinegar, red pepper flakes, onion powder, garlic powder, and oregano in a blender; season with salt and pepper.
In a large deep skillet (or large pot) over medium heat, heat oil. Add pureed tomato sauce, bring to a simmer, then lower to medium-low and simmer for 20 minutes, until slightly thickened.
FOR THE CABBAGE ROLLS:
In a large pot of boiling water, blanch cabbage leaves until tender and flexible, about 1 minute. Set aside.
Make filling: in a large bowl, combine ½ c. tomato sauce, ground meats, cauliflower rice, scallions, and parsley. Season with salt and pepper.
Spread a thin layer of sauce on the bottom of a large baking dish. Using a paring knife, cut out the hard triangular rib from each cabbage leaf. Place about ⅓ cup filling into one end of each leaf, then roll up, tucking in the sides as you roll. Place rolls seam side-down on top of sauce in baking dish. Spoon remaining sauce on top of cabbage rolls. Bake 45 minutes to 55 minutes, until the meat is cooked through and internal temperature reaches 150°”
Garnish with more parsley before serving.

INGREDIENTS⤵️🥘😍
For the Crust:

8 oz. cream cheese, softened
1/4 cup butter, melted
3 large eggs
3 tablespoons half and half
1 cup whey protein isolate
2 teaspoons baking powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon cream of tartar
1/4 teaspoon salt
Toppings:

3/4 cup sugar-free tomato sauce
20 pepperoni slices
1 cup shredded mozzarella
2 tablespoons fresh basil, chopped
DIRECTIONS

Preheat oven to 350 degrees F.

In a blender, combine the softened cream cheese, butter, eggs, and half and half. Blend for about 30 seconds, and scrape down contents.

Add the protein powder, baking powder, garlic powder, Italian seasoning, cream of tartar, and salt. Blend for about another 30 seconds, until smooth.

Pour the batter into a greased 10-inch springform pan. You could also use a 12-inch cast-iron skillet or a casserole dish.

Bake in the oven about 15 to 20 minutes at 350 degrees, until top is just firm to the touch and edges are golden brown.

Remove from oven and spread tomato sauce, add cheese, and pepperoni.

Place in oven another 8 to 10 minutes, until cheese is melted and bubbly.

Let cool a few minutes before serving.

Keto Fried Chicken🥘😍
INGREDIENTS
(FOR THE CHICKEN)
6 bone-in, skin-on chicken breasts (about 4 lbs.)
Kosher salt
Freshly ground black pepper
2 large eggs
1/2 c. heavy cream
3/4 c. almond flour
1 1/2 c. finely crushed pork rinds
1/2 c. freshly grated Parmesan
1 tsp. garlic powder
1/2 tsp. paprika

(FOR THE SPICY MAYO)
1/2 c. mayonnaise
1 1/2 tsp. hot sauce

DIRECTIONS⤵️
Preheat oven to 400° and line a large baking sheet with parchment paper. Pat chicken dry with paper towels and season with salt and pepper.
In a shallow bowl whisk together eggs and heavy cream. In another shallow bowl, combine almond flour, pork rinds, Parmesan, garlic powder, and paprika. Season with salt and pepper.
Working one at a time, dip chicken in egg mixture and then in almond flour mixture, pressing to coat. Place chicken on prepared baking sheet.
Bake until chicken is golden and internal temperature reaches 165°, about 45 minutes.
Meanwhile make dipping sauce: In a medium bowl, combine mayonnaise and hot sauce. Add more hot sauce depending on preferred spiciness level.
Serve chicken warm with dipping sauce.

Italian Chicken & Veggie Foil Packets😍🥣🍽
Ingredients
1 1/4 pounds boneless skinless chicken thighs, cut into 1-inch chunks
1 medium zucchini sliced 1/4 inch thick
1 medium-sized red bell pepper sliced
1 cup chopped green beans
1 medium tomato cut into large chunks
1/4 cup thinly sliced onions
2 ounces sliced mushrooms
1 clove garlic minced
1/4 cup avocado oil
1 tablespoon chopped fresh rosemary
1 1/2 teaspoons salt
1 teaspoon dried oregano leaves
1/2 teaspoon black pepper
Grated Parmesan cheese for serving (optional)
Instructions
Preheat the oven to 400°F. Cut 4 pieces of aluminum foil each about 12 inches square.
In a large bowl, combine the chicken, zucchini, bell pepper, green beans, tomato, onions, mushrooms, and garlic. Drizzle the oil, then sprinkle with the rosemary, salt, oregano, and pepper. Toss to combine well.
Divide the mixture evenly among the pieces of foil, arranging it down the center of each piece. Bring up the two sides of the foil and fold over together twice to seal. Fold up the ends tightly.
Place the packets on a rimmed baking sheet and bake for 25 minutes, or until the chicken is cooked through.
Remove the packets and open the top seams. Sprinkle with grated Parmesan cheese, if using. Eat directly from the packets or transfer to plates.
