Greek yogurt chicken salad ๐Ÿฅ—

Light, fresh, and protein-rich, this is a simple meal that works beautifully for everyday life, whether youโ€™re meal prepping or just want something nourishing and easy.

Ingredients
โ€ข 200 g cooked, shredded chicken
โ€ข 150 g natural Greek yogurt
โ€ข 1 tbsp Dijon mustard
โ€ข 2 tbsp lemon juice
โ€ข 1/3 cup diced celery
โ€ข 1/4 cup diced red onion
โ€ข Salt and pepper to taste

Optional additions:
Avocado, cucumber, cherry tomatoes, salad greens, sunflower seeds.

Method
In a bowl, mix the chicken, Greek yogurt, Dijon mustard, lemon juice, celery, and red onion.
Season with salt and pepper to taste.
Serve on a bed of salad greens and add any toppings you enjoy.

Oat & Banana Cake ๐ŸŒ๐ŸŒพ

A soft, naturally sweet, fibre-rich bake, perfect as a nourishing snack or simple breakfast.
โœ” No refined sugar
โœ” High in fibre for fullness
โœ” Simple, affordable, and batch-friendly

Ingredients (serves 4 snack portions)
โ€ข 2 ripe bananas (mashed)
โ€ข 100 g rolled oats
โ€ข 1 egg
โ€ข 1 tsp baking powder
โ€ข 1 tsp cinnamon
โ€ข 1 tbsp olive oil
โ€ข 50 ml milk (or plant-based milk)
โ€ข Optional toppings: blueberries, walnuts, dark chocolate chips

Method
1. Preheat oven to 180ยฐC
2. Mash bananas in a bowl, then mix in oats, egg, baking powder, cinnamon, olive oil, and milk
3. Fold in optional toppings
4. Pour mixture into a small lined or greased baking dish
5. Bake for 25โ€“30 minutes, until set and lightly golden
6. Cool slightly, slice into 4 portions, and enjoy

This belief is widespread and often shared with good intentions, but it is not supported by strong clinical evidence.

What the science actually shows is that while chronic, long-term high blood sugar can worsen metabolic health and contribute to chronic inflammation, there is no convincing evidence that eating sugar directly fuels existing cancer in humans.

Misunderstanding this concept can lead to unnecessary fear, overly restrictive diets, poor nutrition, and a reduced quality of life, especially for people living with cancer.

Nutrition should be guided by evidence, balance, and context, not fear or oversimplified messages.
