Our research was featured on TVM news, highlighting a scientific test developed to authenticate Maltese pork. 🐖🇲🇹

Using ATR-FTIR spectroscopy and advanced data-analysis models, the study shows that Maltese pork can be distinguished from imported meat based on differences in protein-related spectral structure, particularly within the fingerprint region.

Funded by Xjenza Malta, this work supports food authenticity, consumer protection, and trust in local produce.

The APM-UC Project progress — Spectrum for the Maltese pork! 🐖🇲🇹

As part of the APM-UC project, we analysed samples of Maltese pork using ATR-FTIR spectroscopy, and here’s what we discovered so far:

•Peak 1 (3400-3200 cm⁻¹): Water — weak signal, representing the moisture content in the sample.
•Peaks 2 & 3 (2990-2850 cm⁻¹): Lipids (saturated and unsaturated fats) — very strong signals, confirming the presence of healthy fats
•Peak 4 (2390-2350 cm⁻¹): Residual carbon dioxide — faintly detected.
•Peak 5 (1760-1710 cm⁻¹): Phospholipids — strong carbonyl stretching, essential for cell membranes.
•Peaks 6 & 7 (1710-1490 cm⁻¹): Proteins (Amide I and II) — medium intensity bands indicating protein content.
•Peak 8 (1490-1430 cm⁻¹): Lipids and fatty acids — more evidence of healthy fats.
•Peak 9 (1410-1360 cm⁻¹): Nucleic acids and phospholipids — confirming the presence of important biomolecules.
•Peak 10 (1200-1125 cm⁻¹): Cholesterol ester — a strong signal confirming cholesterol ester in the sample.

These results are helping us understand the composition of local Maltese pork, highlighting its richness in fats, proteins, and essential nutrients.
