We are proud to announce that BKEA Ltd. is a partner in the APRISE (Alternative Proteins Research and Innovation Skills Enhancement) project, funded under Horizon Europe (HORIZON-WIDERA-2024-TALENTS-03).

The APM-UC Project progress โ€” Spectrum for the Maltese pork! ๐Ÿ–๐Ÿ‡ฒ๐Ÿ‡น

As part of the APM-UC project, we analysed samples of Maltese pork using ATR-FTIR spectroscopy, and hereโ€™s what we discovered so far:

โ€ขPeak 1 (3400-3200 cmโปยน): Water โ€” weak signal, representing the moisture content in the sample.
โ€ขPeaks 2 & 3 (2990-2850 cmโปยน): Lipids (saturated and unsaturated fats) โ€” very strong signals, confirming the presence of healthy fats
โ€ขPeak 4 (2390-2350 cmโปยน): Residual carbon dioxide โ€” faintly detected.
โ€ขPeak 5 (1760-1710 cmโปยน): Phospholipids โ€” strong carbonyl stretching, essential for cell membranes.
โ€ขPeaks 6 & 7 (1710-1490 cmโปยน): Proteins (Amide I and II) โ€” medium intensity bands indicating protein content.
โ€ขPeak 8 (1490-1430 cmโปยน): Lipids and fatty acids โ€” more evidence of healthy fats.
โ€ขPeak 9 (1410-1360 cmโปยน): Nucleic acids and phospholipids โ€” confirming the presence of important biomolecules.
โ€ขPeak 10 (1200-1125 cmโปยน): Cholesterol ester โ€” a strong signal confirming cholesterol ester in the sample.

These results are helping us understand the composition of local Maltese pork, highlighting its richness in fats, proteins, and essential nutrients.
