Getting hyped to celebrate LOOOOVEEE day! ⁣With so many goodies to choose from! ⁣

Recipe: 🍫 ⁣⁣
-1 cup rice flour ⁣⁣
-1/4 cup cocoa powder ⁣⁣
-2 tsp baking powder ⁣⁣
-Pinch of salt ⁣⁣
-1/2 cup apple sauce ⁣⁣
-1/4 cup brown sugar ⁣⁣
-1/3 cup almond milk ⁣⁣
-1/4 vegan butter (melted)⁣⁣
-1 tbsp vanilla extract ⁣⁣
⁣⁣
(Feel free to add more sugar if needed 😊) ⁣⁣
⁣⁣

⁣Instructions: ⁣⁣⁣
Preheat the oven at 425F/220C.⁣⁣⁣⁣⁣⁣
-In a large bowl, add the dry ingredients and whisk to blend.⁣⁣⁣⁣⁣⁣
-In a smaller bowl, add the wet ingredients and mix.⁣⁣⁣⁣⁣⁣
-Pour the wet ingredients into the dry ingredients and mix.⁣⁣⁣⁣⁣⁣
-Distribute mixture in donut form. Bake for 13-15 minutes or until wooden skewer comes out clean. Let cool in pan for about 15-20 minutes before gently removing and cooling on wire rack.⁣⁣⁣⁣⁣⁣⁣
-I glazed the donuts with dark chocolate & hearts for decoration. ❤️💗🤍❤️🤍💗⁣⁣

Stack of Twix cookies?? YES PLEASE. ⁣
Twix candy bar but make it into cookies. 😏⁣⁣
They are gluten free, vegan (of course) and low in sugar! 🥰 These will become a family favorite! ⁣
⁣⁣
Recipe: ⁣⁣
Cookie base ⁣⁣
-2 cups almond flour ⁣⁣
-2 tbsp coconut oil ⁣⁣
-2 tbsp maple syrup ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-1/2 tsp baking powder ⁣⁣
-Pinch of salt⁣⁣
⁣⁣
Caramel sauce ⁣⁣
-1/2 cup full fat coconut milk⁣⁣
-1/4 cup monk sugar ⁣⁣
-1/2 cup peanut butter⁣⁣
-1 tsp vanilla extract ⁣⁣
-Pinch of salt ⁣⁣
⁣⁣
Chocolate layer: ⁣⁣
-50-100g Dark chocolate ⁣⁣
-1-2 tbsp Coconut oil ⁣⁣
⁣⁣
(Feel free to add more sugar if needed) ⁣⁣
⁣⁣
Instructions: ⁣⁣⁣
-Preheat oven to 350F/175C ⁣⁣⁣
-In a food processor mix your cookie base ingredients. ⁣⁣
-Place cookie dough mixture in refrigerator for about 30 mins.⁣ ⁣⁣⁣⁣
-Roll cookie dough into about 1 1/2 inch balls and flatten out onto the cookie sheet or parchment paper. (Shape your cookies into a round form).⁣⁣⁣⁣
-Bake for 10-12 mins or until golden brown. ⁣⁣⁣
(I let mine cook a bit longer but always checking every 5 mins) ⁣⁣
-Remove and let cool. ⁣⁣⁣
Caramel sauce process: ⁣⁣
-In a medium sauce pan add the monk sugar and salt or sweetener of choice and stir over low heat until just melted. Slowly start adding your full fat coconut milk, adding a bit at a time stirring after each addition until smooth. ⁣⁣
-Turn off the heat and add in your peanut butter and vanilla extract or nut butter of choice. ⁣⁣
-Let it cool for about 10 minutes to thicken. ⁣⁣
Caramel will continue to thicken upon standing.⁣⁣
-Once the caramel and your cookies are cooled, add about 1 tsp of caramel on top and repeat to all the cookies. ⁣⁣
-Cool in the refrigerator for at least 30 mins. ⁣⁣
-Once set melt your dark chocolate and dip each cookie. ⁣⁣
-Place again the refrigerator for another 30 mins. ⁣⁣
-Store in the refrigerator in an air tight container. ⁣⁣⁣

PUMPKIN PIE CHEESECAKE 🧡⁣

I officially nailed the pumpkin pie cheesecake and I will be making it every year, guaranteed! ⁣
Get ready to save this recipe to share with all your loved ones in your vegan or non-vegan thanksgiving event! 🥰 The texture is “cheesecake” perfect and you can always feel free to add a caramel with pecans or dark/white chocolate drizzles. I stuck to the basics with the vegan whipped cream and more cinnamon of course! ⁣
was a key component with the pumpkin pie spice. ⁣

Recipe: ⁣
For the crust: ⁣
-1 1/2 cups hazelnut flour ⁣
-1/3 cup spelt flour (or oat, all-purpose, rice)⁣
-1 tsp cinnamon powder ⁣
-1 tsp pumpkin pie spice ⁣
-2 tbsp maple syrup ⁣
-2 tbsp coconut oil ⁣
-1/4 cup almond milk ⁣
-pinch of salt ⁣
-1 tbsp vanilla extract ⁣

Cheesecake filling: ⁣
-1 cup cashews (soaked overnight or at least 4hrs) ⁣
-1 can full fat coconut milk ⁣
-250g pumpkin purée (a cup) ⁣
-150g vegan cream cheese ⁣
-1 tbsp vanilla extract ⁣
-1/3 cup coconut sugar ⁣
-1/4 cup maple syrup ⁣
-2 tsp cinnamon ⁣
-2 tsp pumpkin pie spice ⁣
-pinch of salt ⁣
-1 tbsp corn starch ⁣
-1 tbsp coconut oil ⁣

‼️ Feel free to add more sugar & spices for your personal liking ‼️ ⁣

Instructions: ⁣
-Preheat oven at 350F/175C ⁣
-Prepare a round 8x8 springform pan with parchment paper and coconut oil on the sides.⁣
-To make the crust just blend everything in a food processor until you have a dough like texture.⁣
-Press down your dough, make little fork holes all throughout and bake for 10 mins.⁣
-In the meantime again a food processor or blender mix everything from your filling until it is completely creamy and no chunky parts are left. Once you take out your base from the oven, bring heat up to 400F/200C and let cool for a bit before transferring the filling.⁣
-Bake for 55-60 minutes and keep an eye for the top to not get burnt. ⁣
-Once done let cool completely and then transfer to a refrigerator and let ie rest for 3 hours or more.⁣
-Add your favorite toppings! I enjoyed with vegan whipped cream, more cinnamon and pecans.⁣
-Enjoy!⁣

If you’re a golden latte fan like me, you’ll just love these. I promise. These are half-baked but sooooo easy to create! Perfect for your morning or afternoon coffee ☕️ ⁣

Recipe: 🍩 ⁣⁣
For the base: ⁣⁣
-1 cup almond flour ⁣⁣
-1/2 cup walnut flour ⁣
-2 tbsp coconut oil (melted) ⁣⁣
-2 tbsp maple syrup ⁣⁣
⁣⁣
Almond butter layer: ⁣⁣
-1/2 cup almond butter ⁣⁣
-1/4 cup maple syrup ⁣⁣
-6 tbsp coconut oil (melted)⁣
-1/2 tsp turmeric powder ⁣⁣
-1 tsp cinnamon powder ⁣⁣
-1/2 tsp ginger powder ⁣⁣
-1/4 tsp nutmeg powder ⁣⁣
-Pinch of pepper ⁣⁣
(Feel free to add more or less of the spices to your liking) ⁣⁣
⁣⁣
Chocolate drizzle with spices (optional)⁣⁣
⁣⁣
Instructions: ⁣⁣
-Preheat oven to 350F/175C ⁣⁣
-In a food processor mix your crust ingredients. Divide in your donut tray (I use a silicone one). 🍩 ⁣⁣
-Bake for 10-12 mins or until golden. I left mine a little bit longer but just keep an eye on them. ⁣⁣
-Remove and let cool. ⁣⁣
-Combine almond butter ingredients and then divide again amongst the crusts. Optional is to drizzle dark chocolate on top & I also added spices to my chocolate to enhance the spice flavor. ⁣⁣
-Place in the fridge until set. ⁣⁣
-Enjoy! ⁣⁣

Recipe: ⁣🎃⁣
-1 cup pumpkin purée (I used butternut squash) ⁣⁣
-150g dark chocolate ⁣⁣
-2 tbsp coconut oil ⁣⁣
-1/2 cup creamy peanut butter ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-1 tsp pumpkin spice ⁣⁣
-1/4 cup coconut flour ⁣⁣
⁣⁣
Ingredients: ⁣🍫🍫🍫⁣
-In a food processor add all your ingredients (melt your dark chocolate with the coconut oil beforehand) and mix until fully combined. ⁣⁣
-In a 9x5-inch baking pan with parchment paper add your mixture and place in the refrigerator for at least 4 hours or overnight. ⁣⁣
-Cut into bars and enjoy!! 🌟🌟🌟⁣⁣

PUMPKIN PIE SPICE PEANUT BARS ⁣🥜

I had to combine two of my favorites together and they did not disappoint! I’m not gonna lie they’re a bit messy hahah but so worth it!!! ⁣

Peanut butter cookie: 🥜 ⁣
-1 cup peanut butter flour ⁣
-1/4 cup rice flour ⁣
-2-3 tbsp coconut oil ⁣
-1 tbsp vanilla extract ⁣
-pinch of salt ⁣
-1/4 cup almond milk ⁣
-2 tsp pumpkin spice ⁣

White chocolate fudge: ⁣
-1 can vegan condensed milk
-100g vegan white chocolate ⁣
-2 tbsp vegan butter ⁣
-2 tsp pumpkin spice ⁣
-1 cup peanuts ⁣

Instructions: ⁣
-Preheat the oven to 350F/175C. ⁣
-Line an 9x5-inch pan with parchment. ⁣
-In a food processor blend everything together until you have a dough like texture. Add more plant-based milk if necessary. ⁣
-Press down your peanut butter cookie on your pan and bake for 10 minutes. ⁣
-For the white chocolate fudge, in a microwave-safe bowl (or in a saucepan on the stove), combine the vegan sweetened condensed milk, butter, salt, vegan white chocolate, pumpkin pie spice and vanilla extract. Save the peanuts for later. ⁣
-Cook for 1-minute increments, stirring in between (or on medium-low heat on the stovetop), until the mixture is melted and creamy; don’t overheat or let it burn!⁣
-Pour the white chocolate fudge filling over the peanut butter cookie layer and spread evenly with an offset spatula or knife.⁣
-Top with the peanuts. ⁣
-Bake the bars for 15 minutes – don’t overbake! Let the bars cool completely before slicing and serving. The bars can be cut and stored in the refrigerator, well-covered, for several days or frozen for several months.⁣
-Enjoy! ⁣

Recipe: ⁣⁣
-2 cups hazelnut flour ⁣⁣
-2 replacement “egg”⁣⁣
-6 tbsp almond butter ⁣⁣
-6 tbsp almond milk ⁣⁣
-2 tbsp brown sugar ⁣⁣
-Pinch of salt ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-2 tsp baking powder ⁣⁣
⁣⁣
Chocolate filling: ⁣⁣
-200g chocolate spread ⁣⁣
⁣⁣
Instructions: ⁣⁣
-Preheat the oven to 350F/175C.⁣⁣
-Line an 9x5-inch pan with parchment.⁣⁣
-In a large bowl stir together the hazelnut flour, baking powder and salt. ⁣⁣
-In another bowl with a hand mixer, mix your almond butter, brown sugar, replacement eggs, vanilla extract and almond milk until smooth. ⁣⁣
-Add this to your dry ingredients and mix well. The mixture will be thick. ⁣⁣
-Spread half of the batter into the bottom of the prepared pan. Scoop and flatten the fudge mixture evenly over the dough. It doesn’t have to be perfect. Spread the remaining batter over the fudge evenly to cover completely.⁣⁣
-Bake for 30-35 minutes, or until lightly golden on the outside but still fudgy and moist on the inside. Let cool completely before cutting.⁣⁣
-Enjoy! ⁣⁣

Recipe: ⁣⁣
Cookie crust: ⁣⁣
-1 1/2 cup walnut flour ⁣⁣
-1/4 cup coconut flakes ⁣⁣
-1 tbsp coconut oil ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-Pinch of salt ⁣⁣
-1 tbsp maple syrup ⁣⁣
⁣⁣
Caramel filling: ⁣⁣
-1/4 cup vegan condensed milk
-2 really ripe bananas ⁣⁣
-1 tsp vanilla extract ⁣⁣
-1/2 tsp cinnamon powder ⁣⁣
-1/4 cup kahlúa ⁣⁣
-Pinch of salt ⁣⁣

Chocolate: ⁣⁣
-200g dark chocolate ⁣⁣
-2-3 tbsp coconut oil ⁣⁣

Makes 18 cookies ⁣🍪⁣
⁣⁣
Instructions: ⁣⁣
-Preheat oven at 350F/175C ⁣⁣
-Prepare a muffin tin make sure to grease the bottom and sides. ⁣⁣
-In a food processor mix everything from your cookie crust. Once mixed press down to make your cookies. ⁣⁣
-Bake in the oven for 10 mins or until golden. Keep an eye on them. Let them cool. ⁣⁣
-In the meantime make your caramel by mixing it all together and adding it to a small pot. Bring it to medium-high heat, bringing it to a boil. Reduce to a simmer and stir for about 20 mins until thickens. Let cool and then pour over your cookie layer and place in the freezer for 15-30mins. ⁣⁣
-Melt your dark chocolate with your coconut oil and dip each cookie, top with crushed walnuts. Place in the freezer for another 15-30 mins. ⁣⁣
-Enjoy!!! ⁣Store in freezer, in an air tight container. ⁣

-1 cup pumpkin purée ⁣⁣
-1/2 cup almond flour ⁣⁣
-1 cup +2 tbsp spelt flour ⁣⁣
-1/2 tsp cinnamon powder ⁣⁣
-1/2 tsp nutmeg powder ⁣⁣
-1/2 tsp pumpkin spice powder ⁣⁣
-2 tsp baking powder ⁣⁣
-1/4 cup creamy peanut butter ⁣⁣
-2 tbsp coconut sugar ⁣⁣
-1/2 cup almond milk ⁣⁣
-Pinch of salt ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-100g chopped dark chocolate ⁣⁣
⁣⁣
Pumpkin Frosting: ⁣⁣
-6 tbsp vegan cream cheese ⁣⁣
-2 tbsp pumpkin purée ⁣⁣
-1 tbsp vanilla extract ⁣⁣
-2 tsp vegan stiffener ⁣⁣
-dark chocolate chips (for decoration) ⁣⁣

Bake for 15-20 minutes or until wooden skewer comes out clean. Let cool in pan for about 15-20 minutes before gently removing and cooling on wire rack.⁣⁣⁣⁣⁣⁣⁣⁣⁣
-I glazed the donuts with a pumpkin frosting, with a hand mixer I just mixed my ingredients until it was thick enough (place in the refrigerator for at least an hour) and then with a spatula I added it onto my donuts (once they were cooled) topped with the dark chocolate chips for decoration. ⁣⁣

-Pinch of salt ⁣⁣

-Place in the refrigerator for up to 4 hours or overnight. Once set add your chocolate layer by melting your dark chocolate with coconut oil. ⁣⁣
-Set once more in the refrigerator to set. About 15 mins and then carefully cut into bar slices.⁣⁣
-Enjoy with a cup coffee or tea. 😌⁣⁣
