Aflatoxins, produced by molds like Aspergillus flavus that can contaminate soft fruits such as tomatoes, are potent toxins with severe, often irreversible effects on the human body, particularly when consuming rotten or heavily processed tomato products. These toxins are not destroyed by normal cooking temperatures.
The harmful effects of aflatoxins on the human body can be divided into acute and chronic:

1. Acute Aflatoxicosis (Short-Term High-Dose Exposure)
Consuming high levels of aflatoxins over a short period can lead to rapid, severe illness or death. Symptoms include:
Acute Liver Damage/Failure: Severe jaundice (yellowing of skin/eyes), abdominal pain, and edema (fluid buildup).
Gastrointestinal Distress: Vomiting, nausea, and abdominal pain.
Systemic Symptoms: High fever, convulsions, lethargy, and coma.
Fatal Consequences: Acute ingestion can cause death within a few days.

2. Chronic Effects (Long-Term Low-Dose Exposure)
Long-term consumption of even small amounts of aflatoxin-contaminated food can have devastating long-term health consequences:

Hepatocellular Carcinoma (Liver Cancer): Aflatoxin is classified as a Group 1 carcinogen and is a leading cause of liver cancer. The risk increases significantly in individuals with pre-existing hepatitis B or C.
Liver Cirrhosis: Chronic exposure can lead to scarring and irreversible liver damage.
Immune Suppression: It suppresses the immune system, reducing resistance to infectious agents such as HIV or tubercle bacillus.

Stunted Growth and Development: Children exposed to aflatoxins may suffer from stunted growth, developmental delays, and nutritional deficiencies.
Other Potential Cancer Risks: Linked to gallbladder and other cancers.

Risks Specific to Tomatoes
While often associated with grains and nuts, Aspergillus mold can grow on tomatoes and in tomato products if they are spoiled, improperly stored, or if rotten tomatoes are used for cooking. THE LIVING CULTURES IN YOGURT ARE CALLED BENEFICIAL BACTERIA BECAUSE THEY SUPPORT DIGESTION AND ARE NOURISHING.

When beneficial bacteria are taken to improve health, they are considered β€˜probiotics’.
