Together, we will explore how indigenous foods can help tackle nutrient deficiencies, boost food security, and strengthen climate resilience; because the future of food truly begins with what grows in our soil. 🌾

Stop tossing out the stems of your leafy vegetables like Ugu (fluted pumpkin), scent leaf, curry leaf, kale, spinach and many others. Yes, the leaves contain most of the nutrients, but have you also thought about the veggie's transport system "THE STEM?" 🤔

The stem is like the vegetable’s “highway,” carrying water, minerals, and plant compounds from the roots to the leaves, so it naturally stores some of those nutrients along the way.

Instead of throwing them away, wash well, then boil to extract their nutrients or cook them right into your meals.

In the picture above, I fried my curry leaf stems along with tomatoes until they wilted, and the flavor was amazing! 🔥
