🌏 Why I have been a bit quiet lately… 🇱🇦

I’ve just finished an unforgettable week cycling through Laos with Dream Challenges, raising money for Katie Rose Hospice in Australia 💚🚴‍♀️

This ride was a deeply personal one — in honour of my dear stepdad, Athol, who sadly passed away in May at Katie Rose Hospice💔

Every hill climbed, every kilometre pedalled, and every pothole (some more like craters 😩) conquered was for Athol and also for my Dad, who has been laid up in hospital recently - and for all the other amazing people who make such a difference when families & their loved ones need it most.

24 of us pedaled our way through 280km of the most remote and rural parts of Laos — up hills, down hills, with humidity and extreme heat 🥵, along rough dusty roads (with huge lorries), through tiny villages where life is simple and smiles are big. The local people were so humble and welcoming, and the children’s laughter as we cycled by made every drop of sweat worth it.

We even got to cool off in a waterfall on our last day 🏞️ which was a first for me. Followed by a delicious lunch served alfresco at the waterfall under the trees. Pure magic after days of heat and hard work under the Laos sun ☀️

I haven’t spotted a single Thermomix here but I have been dreaming about recreating some of the delicious Lao dishes when I get back to Sally's Kitchen.

My legs are sore, my heart is full, and my mind is already wondering… what is the next challenge going to be? ❤️

This one was for you, Athol 🫶
