Happy new year to all of you🎉🎇I zoomed out for a few weeks to spend time with friends and family and connect on deeper levels with loved ones. Forgive me if I didn’t get back to you, but I needed some time offline reflecting on the last year. Many things have happened, highs as well as lows, but now ready to start a fresh new chapter and celebrate the highlights of last year:

- ‘Educator Changemakers Academy’ I started with and so many inspiring educators participants who have designed to make a positive change in their local context
- Facilitating the ‘Educating for Sustainable Development course together with an incredible team as well as the 25 year celebration conference in the Netherlands .crowell
- Working as a consultant in India with
- Helping to establish a new green Early Years school in Dubai with .khan.900
- Celebrating the publishing of the book by and preparing for this year’s Inner Landscaping courses in The Netherlands
- Last but not least, a new position as regenerative educator in the area of gastronomy and regenerative experiences
- Developing new moments to share Indigenous perspectives on film afternoons/nights as well as as a speaker on events like in the summer and in Germany in the winter together with for

Today is Black Friday and I don’t know about you, but my feed is full of offers, discounts and urgency.

Meanwhile, I’m thinking of the visit to the Rotterdam a while ago looking at this photo of my kids in a room packed with Hello Kitty toys, wall to wall, floor to ceiling. It felt like standing inside a cathedral of consumerism, every wall quietly whispering to children:

“More is normal. More is fun. More is love.”

This is how we gently train the next generation to look for happiness in the next thing they can buy, instead of the life they can create.

Their generation doesn’t need more stuff.
They need us to address the root causes behind overconsumption, our disconnection from nature, our stress, our food systems and model a different story of what a “good life” is.

One of the most accessible levers we all have is food.
Every meal is a chance to:
- support our own health and energy
- reduce our ecological footprint
- quietly step out of the consumerism loop

That’s why, instead of a Black Friday deal, I refuse to buy and instead I’m offering a free resource:

Last week, the fourth-year students at didn’t just travel the world, 🌍 they also travelled 100 years into the future.

Together we stepped into the Court of the Future (2118): a climate-focused theatre installation created by Studio Tegenwind), where the future files a lawsuit against us in the present.

👩‍⚖️ Students walk into a courtroom with a judge and three lawyers.
🌳 Some become a tree, bird, glacier or human from 2118 and accuse us, the people of today.
🏛 Others play citizens, businesses or the State of the Netherlands.
⚖️ A jury made up of students must give a verdict that takes effect immediately.

This isn’t just imagination.
Right now in Kenya’s Maasai Mara, Maasai elder and conservationist Dr. Meitamei Olol Dapash has taken Marriott International, its Ritz-Carlton brand and local developer Lazizi Mara Limited to court. They are challenging the Ritz-Carlton Masai Mara Safari Camp, a $3,500-a-night lodge built by Lazizi and operated under a Ritz-Carlton franchise, which Maasai leaders and scientists say blocks a vital wildlife migration corridor used by wildebeest, zebra and elephants.

Their case is about more than a single hotel. It’s about whether tourism can justify fragmenting habitats, ignoring a moratorium on new developments, and sidelining Indigenous communities who have protected these lands for generations.

In many ways, Dapash and other Maasai leaders are doing in real life what our students simulate in the Court of the Future:

acting as advocates for the more-than-human world, insisting that nature has rights ; to migrate, to regenerate, to exist and that Indigenous communities who have safeguarded these ecosystems must have the power to say “no” when development crosses a red line.

💭 The question we left with our students:

As current or future leaders in tourism and hospitality, where will you draw the line and what developments will you have the courage to oppose in order to protect both communities and the rights of nature?

EuroCHRIE 2025 at Hotelschool: Rethinking the Future of Food & Hospitality

This year, EuroCHRIE brings together educators, researchers and industry to explore some big questions for hospitality and tourism:
• How do we balance travel growth with true sustainability?
• How can digitisation support, rather than replace, human connection?
• How do we respond creatively to labour shortages?

By drawing inspiration from both inside and outside the industry, the conference looks for innovative ways to transform professional practice, business models, and education in hospitality and tourism.

Hosting and attending EuroCHRIE 2025 at , where I teach Regenerative Gastronomy & Experiences, I felt how strongly these themes connect to the future of food and to designing regenerative guest experiences. Let’s shape hospitality that gives back to people and planet.

Food connects more than just our bodies, it connects communities.

This week we gathered at the Spinozahof StadsOase in the heart of multicultural The Hague. What a beautiful hidden treasure of green in the middle of a concrete area of the city center!
A place where food becomes more than just nourishment: it’s a connector, a compass, and a living story.

Together with Voedselfamilies Zuid-Holland and , we explored how food can guide us:
✨ from survival to thriving community
✨ from history and memory to transition and future
✨ from soil stories to spiritual connection with the source

Here, permaculture is not just theory, but it’s practice in action 🌾🍅.
Like a mycelium network, these initiatives weave people, cultures, and ideas together, creating resilience and belonging.

Food reminds us: we are all part of one ecosystem.

👀 Can you spot the insect in this picture? Last week we saw this beautiful insect when I was playing in the playground with my daughters, but trying to take a picture of it was hard as it was hiding in between the colours of the ecosystem around.

Nature has its own way of teaching us the art of camouflage. Many insects use protective coloration to blend perfectly into their surroundings, staying hidden from predators, and sometimes… from us too.

This clever disguise is called cryptic coloration, an ancient survival strategy reminding us how every being is deeply connected to its ecosystem. 🌱✨
