A big anti inflammatory bowl to start my day🥣☀️
Turmeric chai oats have been on repeat lately!
I always boil some diced apple and sultanas in my milk before I add in the oats and spices for some extra sweetness!
My go to recipe is 1 tsp of turmeric powder, 1 tsp of cinnamon, dash of black pepper, 1 tsp of honey and a splash of vanilla essence! Honestly so good 🤩

Vermicelli chicken salad 🥗
Summer is finally hitting here in Lofoten and I am loving being able to whip up quick salads to have in the sun ☀️
The dressing on this is so good and can be used as a topping for loads of different meal ideas!
Ingredients;
•40ml rice vinegar
•2 tbsp honey
•2 tbsp soy sauce
•1 tbsp of natural PB
•1 tbsp of minced ginger

Save this one to make later 🙌

A healthier take on a classic! Sliced banana & PB yoghurt topped with a drizzle of PB and chopped dark chocolate!

Just add a tablespoon of PB to some Greek yoghurt to make a nice thick and creamy mix! Decorate and enjoy ☺️

It’s been a week of
The healthiest way to have cake for breakfast 🍰

1. Chocolate baked oats
2. Cinnamon, maple & plum oats
3. Strawberry cheesecake oats

What is your fav baked oats flavour???

My basic baked oats recipe is;
-1 cup oats or 3/4 cup oat flour
-220ml of milk
-1 egg
-dash of vanilla essence
-1 tsp chia seeds
-tsp honey/maple syrup
-1/2 mashed banana or 1/3 cup apple sauce (optional, can leave out)
•then add in whatever flavours you like
Bake at 175-180 degrees for approx 20 mins. Serves 2

Just add in a mashed banana to your chia pudding mix, use a little less milk and you’ve got yourself another delicious breakfast or snack 🤩

I’ve used a bought caramel protein pudding and some skyr to layer!

Vegan Chilli Con Carne 🌶
This meal is perfect on a cold winters day 🌨
This recipe serves 4 so it’s very budget friendly!

Ingredients;
•can of white beans
•can of kidney beans
•can of black beans
•small can of corn kernels
•2x cans of diced tomatoes
•1 tbsp tomato paste
•1/4 cup water
•1/2 onion, diced
•1 red capsicum, diced
•1.5 tsp salt
•1 tsp pepper
•1 tsp garlic powder
•1 tsp onion powder
•3 tsp chilli powder
•1 tsp chilli flakes
•1-2 tsp cayenne pepper(depends how hot you want it)
•3 tsp paprika
•3 tsp cumin
•1 tsp oregano

Method;
Sauté onion and capsicum in a little olive oil.
Add all other ingredients and bring to the boil.
Simmer for 20 minutes, stirring occasionally.
Serve and enjoy with your fav toppings and sides!

Peanut butter bircher muesli 🥜

This mix up will leave you wanting more!
Ingredients;
-1/2 cup rolled oats
-1 tbsp shredded coconut
-1 tbsp natural PB
-2 walnuts, crushed
-1 tsp chia seeds
-1 cup milk or water/milk combo
-1/2 scoop vanilla protein powder

Mix all ingredients and leave overnight. In the morning top with some fresh berries, peanuts & choc chips! Enjoy!
