Time taken by various foods to pass through the Gastrointestinal Tract depends on various factors such as fiber content of the food, fats present in food, protein content of the food etc. Our digestive system is designed to consume fiber rich foods which is present more in fruits and vegetables rather than Non-Veg. Non-Veg foods must be quickly ejected out of the system like in carnivores, they have shorter GI tract compare to herbivores and humans, if Non-Veg food remains for longer period in our GI tract, it can totally disrupt the normal flora behaviour leading to various GIT problems and diseases.

@ Glycemic index is a number from 0 to 100 assigned to a food, with pure glucose arbitrarily given the value of 100, which represents the relative rise in the blood glucose level two hours after consuming that food. The GI of a specific food depends primarily on the quantity and type of carbohydrate it contains; but also is affected by the amount of entrapment of the carbohydrate molecules within the food, the fat, protein and fibre content of the food, the amount of organic acids (or their salts) in the food, and whether it is cooked and, if so, how it is cooked.
