Beyond Gluten Free NZ Making wheat/dairy/egg -free treats for my son with food allergies, that we can share with loved ones I love baked goods. I love baking.

But these interests can be challenging when you aren't able to eat wheat, dairy and egg. And even harder when someone young in your family is allergic to these things, because you feel like they're missing out. My son was just months old and still breastfed when I realised he was reacting to the food I was eating... And after some doctor appointments it was confirmed that he was allergic to these most basic ingredients. Once he was on solids I was on a mission to make wheat free, dairy free, egg free baked goods that people wouldn't know was allergy-friendly. I wanted one basic all purpose flour mix that wasn't half starches. I want to bake without having to use egg replacers. Can I make it work without xanthan gum or guar gum? I've been experimenting for over 10 years now. Here are some of my baking journey successes.
