Tasty Healthy Lunch....or Dinner....
Happy happy day, this was just so yummo I had to share it with you.
Salad base of silverbeet (from the garden, it grows all winter, even in Taupo ) white & red cabbage - finely chop all three & add a sprinkle of capers for taste.
Top with red capsicum, cherry tomato, lentil hummus, herb spread (very nutritional & tasty too), falafel,& pan fried haloumi strips.
Make it vegan with more falafal & no haloumi - easy as.
I cook up a bunch of falafal at a time & leave them in the fridge - for easy access to a quick lunch or dinner.
NZer's - Turkish Kitchens hummus, dips & falafal mix are preservative free - so no sulphites (220, 202). So many people are affected by sulphites, many without realising it. Sulphites are in most preprepared foods so you can consume a lot of them without realising and the best way to create an intolerance to something is to over consume it. Based on that wee nugget of truth, sulphites are just better out where ever possible.
