Roasted eggplant and Capsicum 🫑

Using leftovers in the fridge and fresh produce from the garden.

I cut the eggplant in half and roasted it in the oven. Then I scooped out the middle and mixed the eggplant mixture in a bowl with the following ingredients.

Sausages leftover in the fridge
Bacon to use up
Spinach out of the garden 🥬
Red onion
Tomato 🍅
Spring Onion 🧅
Cheese
Added some salt and pepper
Added some herbs

The capsicum I just cut in half didn't need to be roasted beforehand. Can also be done with marrows.

Bottle of eltrolights on the drive there

During the 2hr and 24mins 35km ride
1 banana
2 x
4 Jet plain lollies
1 bottle / pack of race fuel
1 gel at the half way point

After race
Burger
More eltolight drink / water

When I got home 1 hour drive later
Protein shake
Snacks
Toastie

Dinner will be loaded fries
