Quick and Easy Air Fryer Beef Sausage and Squash
( that’s simple, gut-friendly, and family-approved)
Prep: 5 minutes
Cook: 10–14 minutes
Clean-up: basically none
Ingredients
1 lb beef sausage (sliced into coins)
2 cups yellow squash
½ onion, sliced
1 tbsp olive oil or avocado oil
Salt & pepper to taste
½ tsp garlic powder or Italian seasoning
Optional add-ins
Bell pepper slices
Zucchini
Red pepper flakes
Fresh parsley after cooking
Instructions:
Preheat air fryer
380°F for 3 minutes (optional but helpful).
Toss everything
In a bowl, combine sausage, squash, zucchini, onion, oil, and seasonings. Toss well.
Air fry
Add mixture to the basket in an even layer.
Cook at 380°F for 10–14 minutes, shaking halfway.
Finish:
Check squash for tenderness and sausage for browning.
Cook 2 more minutes if you want extra crisp.
Tips for best results:
Don’t overcrowd — cook in batches if needed
If squash releases water, just shake and keep cooking
Serving ideas:
Straight from the basket
Over rice, cauliflower rice, or quinoa
Topped with a soft-boiled or fried egg
Quick flavor swaps:
Italian: add oregano + basil
Smoky: paprika + garlic
Kid-friendly: skip onion, add bell pepper

Preheat oven
400°F
Prep the pan:
Line a sheet pan with parchment paper.
Toss everything
Add sausage, squash, onion, and pepper to the pan.
Drizzle with oil, sprinkle seasonings, and toss to coat.
Roast:
Spread into an even layer.
Roast 20 minutes, then stir/flip.
Finish:
Return to oven for 5–10 more minutes until sausage is browned and squash is tender with caramelized edges.
