If you have a sweet tooth now and then, it's ideal to bake your own. This very almondy creation- as I had been dreaming of almond - got whipped up in my kitchen in a few minutes from items I had around. A moist texture - not cake like or scone like .
Preheat oven to 350
2 c almond flour
2/3 c sugar
1/3 cup regular flour
1/2 teaspoon baking powder
MIX THOSE TOGETHER THEN ADD
1 STICK melted butter, 1 egg, almond extract and vanilla to taste. I added "with my heart"- at least 1 teaspoon almond extract, and 2 teaspoon of vanilla that I make myself. Mix those all well, then blend in with a spoon, to the flour mixture.
I let the batter sit for 30 min to the bowl before putting it into the muffin cups.
I had just enough for these standard size muffin molds. I pressed generous amounts of sliced almonds on top
Bake for 20 minutes or a bit more. Remove from oven and let sit for half an hour , as the interior will continue to cook a bit.
