Breakfast MUFFINS🔥

Ingredients
2 oz cream cheese
2 C mozzarella, shredded
2 eggs, beaten
1 C almond flour
pinch salt & pepper
2 oz colby jack cheese, thin cubes (or your choice of cheese)
6 breakfast sausage patties, pre-cooked

Instructions
Preheat the oven to 400.
In a microwave safe bowl, add cream cheese and mozzarella. Microwave for 30 seconds at a time until cream cheese is very soft and mozzarella starts to melt. Mix well! And by mix well I mean, stir stir stir! You want this really combined .
In a small separate bowl, combine beaten egg and almond flour. Add cheese mixture and mix well, again, REALLY well.
Dough may be sticky, this is ok. Dust it with additional almond flour and form into a ball. Place on plastic wrap and refrigerate until firm.
Cut into sections to form 6 3″ balls, depending on the size of the sausage.
Flatten dough balls, place sausage on the dough, then cheese and wrap dough around.
Put the stuffed dough into a greased muffin tin.
Bake for 12-15 minutes or until golden and set. Top with more mozzarella if desired.
Dont eat them all 😜

Keto White Chicken Enchiladas

🌮 Happy Taco Tuesday!!! 🌮

2-3 cups Shredded Chicken
Low carb tortillas
1 small onion, diced
2 cups Chicken Bone Broth
2 T heavy cream or thickener of choice
1 C Sour Cream
4 oz Green Chiles
2 C Shredded Monterey Jack Cheese
1 small jar Verde Salsa

-Heat the chicken bone broth over medium heat. Whisk in the heavy cream and let thicken. Stir in the sour cream and green chiles.
-In a bowl, combine 1 cup of cheese, the diced onion, and the shredded chicken.
-Place 1/4 - 1/3 cup of the chicken mixture in the center of each tortilla and roll them up.
-Pour 1 cup of the sauce on the bottom of the pan, then lay the enchiladas in it. Pour the remaining sauce over the top of the enchiladas, top with cheese, and bake at 350 for 20-25 minutes.
-Top with verde salsa and serve.

One-Pan Garlic Chicken Broccoli Pesto🥦

Ingredients

1 Tbsp avocado or coconut oil
2 Chicken breast, sliced into strips
2 Tbsp Fresh garlic
1 Tbsp Salt and pepper
1 cup Heavy Cream
1 cup Cheddar Cheese
¼ cup Pesto
1 cup Tomato
2 cups Broccoli

Instructions

Heat the oil in a pan, put in chicken and cook for about 2-3 mins (don’t overcook)
Add in fresh garlic, salt and pepper, stir
Then mix in the heavy cream, cheddar cheese and pesto until evenly combined
Next, bring to boil and cook for about 7 mins
Toss in tomatoes and then broccoli, stirring until cooked
Remove from heat

To serve, you can add add in mozzarella or parmesan on top
Enjoy!!!

Crockpot Buffalo Chicken Soup🥣

Ingredients:

3 medium Chicken Thighs, deboned and sliced (~1.2 lbs without bones)

1 teaspoon Onion Powder

1 teaspoon Garlic Powder

½ teaspoon Celery Seed

¼ cup Butter

1/3 – ½ cup Frank’s Hot Sauce (depending on how spicy you like it)

3 cups Beef Broth

1 cup Heavy Cream

2 ounces Cream Cheese

¼ teaspoon Xanthan Gum

Salt and pepper to Taste

The Ex*****on

1) De-bone the chicken thighs, slice the chicken into chunks and drop them in the crockpot with the rest of the ingredients to the crockpot except for cream, cheese, and xanthan gum.

2) Set crockpot on low for 6 hours (or high for 3 hours) and let cook completely.

3) Once everything is cooked, remove the chicken from the crockpot and shred using a fork.

4) Add cream, cheese, and xanthan gum to the crockpot. Use an immersion blender to emulsify all of the liquids together.

5) Place the chicken back into the crockpot and stir together. Taste and season with extra salt, pepper, and hot sauce if you'd like.

Garlic Butter Scallops😘
Ingredients
1 pound Scallops fully thawed
3 tbsp Butter
2 tbsp Lemon Juice
1/2 tsp Garlic Minced
2 tbsp Olive Oil
Salt & Pepper to taste
Instructions
Once your scallops are fully thawed. Pat them with a paper towel to dry them off.
Top the scallops with a dash of salt and pepper.
In a large skillet, begin to heat olive oil over medium high heat.
Add scallops. Cook for 3 minutes on each side (try not to disturb/move them around while cooking).
Remove the scallops from the pan.
Lower heat, then add butter, minced garlic and the juice of 1 lemon. Continue to simmer until butter is melted, and garlic becomes fragrant.
Return the scallops to the pan, and cook just until heated.
Top with fresh parsley and additional lemon slices, if desired

Chicken Bacon Ranch Bowl

2 lbs. chicken breast, cut into bite-size pieces
4 slices bacon, cooked and chopped
1/2 C homemade ranch dressing
2 T avocado oil
1 large zucchini, quartered
1 large yellow squash, quartered
2 C Brussel sprouts, quartered
1/2 yellow onion, sliced

Dry Ranch Seasoning
1 /2 t salt (more or less to taste)
1 T dill w**d (add more if desired)
1 T dried parsley
1 T dried chives
1/2 t onion powder
3/4 t garlic powder
1/4 t black cracked pepper

Air Fryer Method
Transfer the chicken and veggies to a large bowl and drizzle with the avocado oil and the dry seasoning. Mix with a wooden spoon until everything is coated with the oil and seasoning.
Add the chicken and veggies to the air fryer and cook on 375F for 14 minutes, shaking halfway, or until the chicken and veggies are charred and chicken is cooked through. If your air fryer is small, you may have to cook them in 2-3 batches.

Oven Method

Preheat oven to 425F and mix all the ingredients for the ranch seasoning in a bowl.
Add the chicken and veggies to a large bowl and drizzle with the avocado oil and the dry seasoning. Mix with a wooden spoon until everything is coated with the oil and seasoning. Add everything to a coated baking sheet pan and spread out evenly.
Roast in the oven for 28-30 minutes or until chicken reads 165F and the veggies are browned and tender.
Optional: Broil on high for 2 to 3 extra minutes to get everything extra crispy.

Keto Chicken Enchilada Casserole

low carb tortillas
1.5-2 lbs skinless chicken breast
2 C enchilada sauce
1 C shredded mexican cheese
1/4 onion diced
10 oz Rotel mild diced tomatoes and green chilies
1/2 t salt
1/4 t pepper
1/4 t cumin
1/2 t chili powder
1/8 t cayenne pepper

Boil chicken then shred.
Preheat oven to 400°F
Place chicken in a frying pan.
Add onion and can of Rotel over chicken including water.
Add salt, black pepper, cumin, chili powder and cayenne pepper to chicken.
Cook on medium high heat for 5 minutes.
Remove and mix in enchilada sauce. Save 1/2 cup sauce to top tortillas off with later.
Layer casserole with chicken, cheese then 4 tortillas. You can make 2 of these layers. The last layer will have the tortillas.
Top with saved sauce to keep them from drying out then add cheese on top.
Bake for 20 minutes.

Keto Lemon Cheesecake Fluff☁️🌤

INGREDIENTS

1 Dry Packet Sugar-Free Lemon Gelatin 0.3 oz size
1/2 Cup Water
1 Cup Heavy Whipping Cream (can use 8 oz tub whipped topping in its place if you are not worried about having more carbs.)
8 oz Full Fat Cream Cheese room temp

INSTRUCTIONS

In a stand mixer add your whipping cream and whisk it on medium to high speed until stiff peaks form. Set aside.
In another mixing bowl beat the cream cheese until it is soft.
In a microwave-safe dish heat the water to boiling. It should take about a minute and a half. I just heat it right in a pyrex measuring cup.

Dump the packet of lemon gelatin in the water and mix until fully dissolved.
Slowly pour about half of the lemon mixture onto the cream cheese and mix well.

Then pour the other half in and a little of the whipped cream and mix well.
After that is fully mixed add the rest of the whipped cream and mix just until it is fully blended. Don’t overbeat it.
Pour into dishes or airtight container and store in the fridge until you are ready to serve.

NOTES
If you replace the whipping cream with an 8 oz tub of thawed whipped topping it will work, however, it will increase the carbs and lower the fat.

Keto Poke Bowl🍣

Ingredients
½ lb sushi grade salmon or Ahi tuna, cubed
¼ cup mayonnaise
1 tbsp Sriracha sauce
1 avocado, cubed
¼ cup green onions, chopped
1 tbsp black or white sesame seeds (optional)

Directions:
1.Place the cubed salmon (or tuna) in a medium-sized mixing bowl.

2. In a separate small bowl, combine the mayonnaise and Sriracha sauce to make the spicy mayo. Pour over the fish and gently toss to coat.

3. Add the rest of the ingredients and gently toss to combine. Serve cold and enjoy.

Chicken & Cauliflower Rice Casserole

1 rotisserie chicken (4 cups)
1 C heavy cream
1 C cream cheese, softened
1 T minced garlic or garlic powder
1/2 small onion, finely minced (or onion powder)
1 C sharp cheddar cheese, shredded (or parmesan)
1 t smoked paprika
Fresh cracked black pepper, to taste
1/2 C chicken stock
1 large head cauliflower, riced

Preheat oven to 400.
Grease 9×13 baking dish.
Remove skin from rotisserie chicken and chop meat into bite sized pieces.
Cook cauliflower for 7 minutes in the microwave with 1/4 cup water.
Allow to cool down for a couple of minutes.
Drain excess water from cauliflower.
Combine chicken, cream, cream cheese, onion, minced garlic, pepper, paprika, chicken stock, and cauliflower rice.
Pour the chicken mixture into the baking dish and top with shredded cheddar cheese.
Bake the casserole uncovered for approx 25 minutes. Enjoy!
