Day #1 of the Restorative Retreat is in the books. We could not ask for a more beautiful setting to find out zen in than This home is open, spacious, bright and perfect for building connection.

I have some amazing women here this weekend and though they are all different and wanting different things they share one commonality, the desire to introduce more peace and mindfulness into their lives. They got spa treatments, decorated journals, made journal entries, opened up and connected, showed vulnerability, and ended the night with sweating it out in the hot tub!!

Looking forward to another meaningful day with the ladies. Stay tuned for more pics for the weekend and DM to get on the list for the next retreat!

Only a few spots left for the January retreat!! We get to experience the new retreat lodging facility and I could not be more excited. I almost forgot about - I traveled over the weekend so did not have time to prepare anything to bring for lunch today. Could I have said 'screw it' and grabbed McDonald's for lunch? Yes. Did I? No. And let me tell ya, that Filet O’ Fish was sounding really good when I woke up tired and hungry.

But alas, I fought the urge and I went with a trusted quick meal I go for when I'm low on time or too hungry to wait to eat. I threw this together at 7:15 this morning as I was rushing to get to work.

*4-6 frozen turkey meatballs
* 1 minute rice brown rice cup (these are a lifesaver when you need a quick meal)
* Pasta Sauce (to taste)
* Shredded Mozzarella (to taste)

Microwave meatballs for 2 minutes, or until heated through. Microwave the brown rice for 1 minute (or as directed). Transfer to a dish, put meatballs on top, pour sauce on top and add mozzarella cheese. Heat until sauce is hot and cheese is melted.

Add a nice side salad loaded with veggies or some spinach or broccoli on the side.

Lunch in less than 5 minutes!

coming back at ya. This is another "working with I had" meal that I made last Friday.

*Frozen salmon thawed in fridge (4 oz)
*Leftover brown rice from lunch
*Cherry tomatoes
*Spinach
*Bag of microwavable sweet potatoes - you can eat off these for a few days with meals or as snacks!

1. Season salmon w/garlic powder, paprika, olive oil, salt, pepper - place in air fryer at 370 degrees for 6 minutes

2. Microwave sweet potatoes in bag for 8 min

3. Sautee' spinach and tomato in olive oil and garlic

4. Reheat rice

Place rice on bottom of bowl, cover w/spinach and tomatoes, place sweet potato on side and salmon on top of rice.

Less than 20 minutes start to finish!!

Ya'll know I love a good self care weekend. I hit a hard workout on Friday afternoon and KNEW I would be super sore Saturday. Luckily I had a massage and cupping sesh already scheduled for Saturday!

Started early Saturday with a Cycle/Strength workout at in Buckhead. Followed that up with a massage and cupping session at Atlanta Wellness Studio. And finished my day up by hitting up for 30 minutes in the compression boots - if it weren't for those, I would be walking like I have a stick up my butt right now.

The official dates for the Restorative Retreat in January have been chosen! I just booked with yesterday to come do a sound bath with the group. The ideas for other activities are flooding my brain right now. It's gonna be a great weekend to regroup after the holiday's and to start the new year off right!! There are only a few spots left so if you want to join, contact me to sign up as soon as possible!

Meal Prep Monday! I'm thinking I'll make this a thing now. You're welcome.

First things first, do you have an air fryer? If not, you need to go get one ASAP. I got mine for $40 at Best Buy last year and it has been life changing for me. On nights I don't feel like taking the time to prep a whole meal I just throw a piece of chicken or salmon in the air fryer and serve over some minute brown rice (I use the individual cups you microwave) and sauté some veggies and voila - dinner is served in 20 minutes or less.

Here I used a chicken breast seasoned with garlic powder, olive oil, and pepper. Put in air fryer on the air fry setting at 370 degrees for 16 minutes (flip halfway through). While that's cooking I sauteed some fresh spinach I had in the fridge with olive oil and garlic and added in some cherry tomatoes I had on the counter that needed to be used. Super quick, super easy, healthy and tasted good.

If you want to sub out the chicken for salmon, brush olive oil on each side, season with paprika, garlic powder, salt and pepper. Throw in air fryer at 390 degrees for 6-7 minutes. Serve with veggies and a starch (rice, sweet potatoes, quinoa) or over a nice big salad.
