If you are watching your carb intake, for health, diet, or any other reason, there are always yummy substitutions that you can apply. Mexican red rice is delicious, but there might be too many carbs for some. I prepared the "real thing" today, but also the "cauli rice" version, for those of us watching carbs. You can't (almost) tell! Healthy food can be tasty and delicious! !
