You don’t have to love the work, you just have to desire the end result.

You have to know your ‘why’. You need to immerse yourself in that ‘why’. Motivation is fleeting so until you create the habit of whatever it is you need to do to reach your goals, you need to live in that ‘why’.

Every goal worth reaching is going to be hard, it is going to take you out of your comfort zone. The good news is, the longer you stay out of your comfort zone, the bigger it becomes. You’ll find yourself being able to do things you never thought you could.

Once you push past that moment when you want to quit, that moment it gets hard, that’s when the real growth happens. That’s when the switch flips and you start to enjoy the process.

Teriyaki Scallops and Green Beans

Got this one in a blue apron box and absolutely loved it!

Ingredients:
1 tbsp Sesame Oil

10oz Scallops
1/2 C Long Grain White Rice

1/4 tsp Crushed Red Pepper Flakes
6 oz Green Beans

Sauce:
1 tbsp Honey
1 tbsp Rice Vinegar
2 tbsp Soy Glaze
1 tbsp Soy Sauce

Garnish:
1 tsp Black & White Sesame Seeds

Cook the rice in 1 cup of salted water.

Saute the green beans with half of the sesame oil and the red pepper flakes.
I
Sear the scallops (seasoned w/ salt and pepper) in the other half of the oil. Add the sauce and spoon it over the scallops as it cooks on the other side.

Such a quick and easy recipe! Let me know what you think of it!
