Keto Pumpkin Cheesecake

Creamy Keto Pumpkin Cheesecake can be made into a bar or bars and makes the BEST keto dessert this fall. 

Servings 9 slices
Calories 291kcal
Ingredients
Base:
* 2 Tbsp powdered Erythritol
* 2 Tbsp butter
* 1 cup almond flour or ground walnuts
* 1/2 tsp pumpkin spice
Filling
* 2 cups (16 oz) cream cheese at room temperature
* 1 cup powdered Erythritol
* 1 cup pumpkin puree canned or steamed pumpkin *see note
* 2 large Eggs at room temperature
* 1 tsp Vanilla Extract
* 1 tsp pumpkin spice mix *see note
Instructions
To make the base:
* Preheat oven to 325F. Line an 8x8 pan with parchment paper or grease with butter; set aside.

In a medium mixing bowl, combine melted butter and erythritol, mix until fully blended. Add almond flour and pumpkin spice; stir until combined.

Transfer mixture to 8x8 pan and press evenly mixture on the bottom of the pan. Cook in the oven for 10 mins, then set aside to cool.

To make the filling:
* In a large mixing bowl, beat cream cheese and Erythritol until smooth. Add pumpkin puree, eggs, vanilla, and spices. Beat together until well combined.

Pour into crust. Spread out evenly and bake for 40 minutes or until the edges are firm but the middle still jiggles slightly (it will appear dry completely across the top). Remove from the oven and let sit for 10-15 minutes then cover with plastic wrap or foil and refrigerate for at least 4-6 hours before slicing.


Notes
To make your own pumpkin puree: Preheat oven to 325 degrees F. Cut the pumpkin in half, stem to base. Remove seeds and pulp. Cover each half with foil. Bake foil side up, 45 min - 1 hour, or until tender. Scrape pumpkin meat from shell halves and puree in a blender. Strain to remove any remaining stringy pieces.

To make your own pumpkin spice: Combine 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1/8 teaspoon ground cloves, 1/8 teaspoon ground ginger

⁣Fathead Dinner Rolls

SAVE and SHARE if you know someone who needs this bread recipe!!

These will be on my Thanksgiving table for sure!!

Makes 8 rolls

Ingredients
1.5 c. Shredded mozzarella cheese
2 oz cream cheese, cubed
1 large egg
1.25 c. Almond flour
2 Tbsp. Psyllium husk powder
1 Tbsp. baking powder

Directions
Preheat oven to 400
Line baking sheet with parchment paper

In saucepan over low heat
Melt cheeses together

Pour cheese into a food processor add egg, blend until smooth

Add dry ingredients and process until combined well

Scape dough onto parchment paper, shape into a rectangle and lightly score into 8 pieces.

Place in freezer for a few minutes to cool

Use avocado oil if dough is sticky roll into 8 balls and bake for 13-15 min. Evenly space rolls

Enjoy!!

As a teenager I had people in my life who told me I couldn’t do things.... Or better yet, they wouldn’t invest in me because if I failed they would’ve wasted their money.

I brought that lack of self confidence and self worth into adulthood and often QUIT things or wouldn’t start things I thought I’d fail.

My life became a series of “almosts”

I almost moved to California to pursue acting

I almost got my PhD

I almost started my own business

I almost became a mother

I almost finished a screenplay and got an agent....

Never let Anyone determine your worth!

I can do hard things. I can do ANYTHING! You placing limits on me says more about YOU then it does about me.

Because finally... I AM DOING IT! And it feels AMAZING!!

Self care comes in many forms but most of us think of it as a reward when we have free time or extra 💰.

I say it should be a non negotiable on a weekly or daily basis. We can’t take care of others unless we take care our ourselves....

We can’t love each other if we don’t love ourselves and when we love ourselves we are kind, we show gratitude and most importantly we do what we can to look and feel our best..

I used to think of self care as a reward but now it’s a MUST.

This week was a first for me.... I started doing coffee enemas.

As a higher level of detox this helps to cleanse the liver and gallbladder and has many other health benefits which is why that is just ONE of the many things I do to live myself.

Some of my others:
Going to the chiropractor
facials/massage
grounding
morning meditation
epsom salt baths
avoiding alcohol and sugar for periods of time
phoning a friend or loved one
Sauna
Workouts
Long walks with my husband
Spending time with my animals
Reading a book

And I’m sure there are many others I’m not even thinking of!

I challenge you to share and do 1 form of self care for the next 7 days and tell me how differently you feel!!

How hard is that!?
Who is willing to do that?

I was never willing to do that and when my thinking changed around this and I started really doing it with intention....

I changed. I was different.... I am better... in fact I am the best version of myself when I treat myself right.

You’re worth it, don’t forget that!!!

After a quick trip back east I brought my dad back to Texas.

He drinks ketones and tries to follow a low carb diet but at 80 years old he still loves his sugar.

While I wasn’t strict low carb at home I managed to come back so fired up to head into fall with a plan:

After losing a dog to cancer last week, I am so grateful for the the rest of our clan, 2 black land and a yellow.
We rescued Tex almost 2 years ago, he was surrendered to a rescue 2x, he was over fed, in desperate need of love and a stable home. Life would not be the same without him, he has my whole ❤️.

I love the opportunity to provide a wonderful home for these fury friends but who really rescues who?

My mother once said that her 40’s was when she felt the best in her life.

Now I have no doubt that was true. In her 50’s she developed heart disease, high blood pressure, high cholesterol, insulin resistance, had bypass surgery, stopped exercising. Went through menopause and was given sleeping pills and anti depressants.

In her 60s she was on meds for all those conditions plus became diabetic, gained weight, and was tired a lot.

All that lead to cancer in her early 70’s and by that time she had so many health conditions and was in constant pain it broke my heart because there was nothing I could do for her.

I’m almost the age she was when her health started to decline and I’ve been diagnosed with insulin resistance and about to hit menopause.

I don’t want my 40s to be the best years of my life I want to keep getting better, healthier, stronger so that I can be a light for other woman who feel that their life is slipping away, like my mom.

What can start with a lack of energy, weight gain, and feeling overwhelmed can suddenly become a life you don’t want, a body you wish you could change and no idea where to start.

Start at the beginning like I did. One day at a time, showing up and being consistent.

25lbs down and counting. I will be Fit by 50!!
