Salads are not just for the summer… 💚🌱
Hearty bowl salads are what I’m into this season. With lots of fresh greens, some from the garden, I can get a good amount of fiber and topped with tofu (today), plenty of protein.
Today I used some quinoa, added grated broccoli and garden Bok Choy. I chopped some orange bell pepper and avocado. I mixed in some toasted almonds, cranberries and sunflower seeds. I also sprinkled over some pomegranate seeds. The dressing was simple with hummus, to thicken it, lemon juice, balsamic vinegar, salt and pepper, and herbs. What are you into this season?

Crunchy and savory lettuce tacos 💚🌱
This lunch is so easy and you can put whatever you want really. Today I chopped up carrots, cucumbers and chayote. I sautéed some tofu and cauliflower, added some peanut butter and dark soy sauce. And I topped it with purple cabbage and broccoli sprouts. Almonds and green onions 💚🌱

Enjoying a Sunday at home and made this for lunch today

Quick Salad 💚
Full of flavor and texture

Lettuce, farro and red lentils topped with carrot ribbons, corn and garden chives, seasoned with a light sesame and rice vinegar dressing with salt, garlic and sesame seeds. Golden tofu. Easy peanut dressing, soy sauce, lemon juice, garlic chili, grated ginger and a little water to desired consistency. Topped with delicious seeds of pumpkin , flax and sesame seeds

I love tofu, bell peppers, Bok Choy, and carrots. Flavored with fresh ginger, garlic, sesame, miso and turmeric. A little coconut milk and sriracha 🌶 Just keeping it simple
And I love that the carrots and Bok Choy are from the garden 💚🌱

We hear so much about needing protein, but fiber, just as necessary for our health, is often overlooked. Remember that stat about 97 percent of Americans getting enough protein? Well with fiber it’s the opposite: 97 percent of us don’t get enough fiber. Most American adults only get about 15 grams a day, which is quite a bit less than the 25 grams women need and much less than the 38 grams men need, according to the Institute of Medicine. Those aren’t some ridiculously out of reach requirements, but 97% of Americans don’t meet those needs.
We’re sure by this point you won’t be surprised to learn that plant-based diets are excellent at providing the fiber you need. In fact, fiber only comes from plants. That’s right—when you eat meat and other animal products, you’re getting precisely no fiber from it. This applies to eggs and fish as well. However, eating lots of legumes, vegetables, fruits and nuts is a great way to ensure you’re getting plenty of fiber in your diet. Whole foods in general are the way to go: avoid refined flours and products made from them, including breads and pasta.

Curry Bowl 💚🌱

Soba Noodle Soup 💚🌱
I loaded this delicious soup with cabbage, bok Choy, green onions, and carrots then topped it with tofu, sesame seeds, cilantro and Sriracha 🌶 The broth is light and flavored with ginger, garlic, shiitake mushrooms and the sautéed veggies but I added 3 T. of pumpkin purée to the vegetable broth to thicken it a little. It turned out delicious 😋 even for breakfast.
