Meal prep during a snow day! No trending audio or a voiceover because I don’t have time to do one. And to be honest, voiceovers aren’t my favorite, and this year is about doing things I love, haha!⁠

Made some shredded chicken for my cranberry pecan chicken salad, chocolate chip oatmeal bars, and some protein chia pudding. Easy lunch for the week, plus two snacks!⁠

Creamy chocolate overnight oats! I’m a huge fan of overnight oats for breakfast (or lunch tbh), and these high-protein overnight oats are perfect to satisfy a chocolate craving. Made with rolled oats, chia seeds, greek yogurt, chocolate protein powder, cocoa powder, vanilla, cinnamon, and a touch of maple syrup. They’re thick and creamy and pack 40 grams of protein and 12 grams of fiber!⁠

Some real thoughts lately, and an easy meal! Reminding myself that the things I can worry about on here don’t really matter in real life, but it can be hard not to think about them when some of your business is on social media.⁠

Anyways, really enjoying pot roast lately for an easy protein that makes a ton. It can be used in so many ways or just serve with some carbs and veggies, and you are set!⁠

2025!! My favorite year yet!

This year FLEW BY. They say time flies when you have a baby, and now I can truly see it. It feels like just yesterday I was pregnant, and soon we will have a one-year-old. Time is a thief!!

Some personal highlights:
- had a baby!! Will anything ever top this?!
- traveled back east for 2 months
- made a trip to JMU
- made some new mom friends & am so grateful for like-minded women to go through motherhood with
- started to read again (I read 27 books this year, which I’m very proud of)

What’s to come next year? Honestly, I have no idea! We will continue to publish macro-friendly recipes, but other than that, I don’t have much planned.

I’m currently watching our daughter full-time while running Eat the Gains, so it’s been a bit of a balancing act and will continue to be. I am so grateful for all the hard work I put in over the last decade, so I can step back some while my business still runs (with the help of my team!). I know this time will be short-lived, and I don’t want to look back and feel like I missed it because I was too focused on working.

On a personal level, I want to start to make sourdough (this has been a goal for like 3-4 years now lol), get “dressed” for the day more often than not, start running again, spend less time scrolling on my phone, travel somewhere (besides the East Coast), and start to play pickleball for fun.

This year has truly been so special. Yes, it was challenging at times, but becoming a mom has been such a wonderful experience, and I don’t know how anything can top it.

I wasn’t as present on Eat the Gains compared to previous years, but you kept showing up and supporting me. And without you, there would be no ETG. I appreciate you being here, trying my recipes, following along with what I’m sharing, sharing my site with friends and family, trusting my recommendations, and more. I am so grateful that you take time out of your day to spend with me! Your continued support doesn’t go unnoticed.

So thank you for supporting me and allowing me to continue to do this as my job - I am so grateful!

Stuffed shells with meat and ricotta! They’re hearty and cozy and make the best comfort food. This recipe was adapted from my mom - I simply added an easy meat sauce to make them a little more balanced and add more protein. Make them for family dinners, gatherings, or holidays. Plus, they make a generous batch, and the leftovers reheat beautifully.

Easy homemade caramel popcorn!! Inspired by those massive tins of popcorn popular during the holidays, I decided to make my favorite flavor at home. This recipe combines freshly popped popcorn and a homemade caramel sauce made from butter, coconut sugar, and full-fat coconut milk (no corn syrup needed!). It’s super easy to make and absolutely delicious - you’ll never want to buy store-bought again!
