This year, try your hand at a Stuffed Acorn Squash! Why? It’s versatile, high in fiber and nutrient dense. 🙌
It’s a delightful, healthy option that’s perfect for those cozy fall vibes. 🍂✨
Here’s how to make it:
1. Prep Your Squash:
- Preheat your oven to 400°F (200°C).
- Carefully cut the acorn squash in half from stem to bottom.
- Scoop out the seeds and strings with a spoon. If you find the squash hard to cut, microwave it for 2-3 minutes to soften it slightly.
2. Season and Roast:
- Brush the inside of each half with olive oil and sprinkle with salt and pepper.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25-30 minutes or until tender.
3. Prepare Your Filling:
- While the squash is roasting, cook 1 cup of quinoa or rice according to package instructions.
- In a skillet, heat a drizzle of olive oil over medium heat. Add diced onions, bell peppers, and any other veggies you like (such as spinach or mushrooms), sautéing until softened.
- If you’re adding protein, cook 1 pound of ground turkey (or your choice of protein) in the skillet until browned and fully cooked.
4. Combine Ingredients :In a large bowl, mix the cooked quinoa/rice, sautéed veggies, cooked protein, and spices of your choice (think garlic powder, cumin, or herbs).
- For a sweet touch, fold in a handful of optional dried cranberries.
5. Stuff the Squash :Remove the roasted squash from the oven and carefully flip them cut-side up.Spoon the filling generously into each half until they are packed full.
6. Final Bake: Return the stuffed squash to the oven and bake for an additional 10-15 minutes, just until everything is heated through and a bit golden on top.
