Here’s a quick Citrus Nourish Powerhouse Bowl, packed with vibrant superfoods to fuel your day! 🥣
- Quinoa -1 cup cooked quinoa
- Roasted sweet potatoes- 1 cup diced and roasted
- Sautéed Swiss chard- 1 cup, cooked until wilted
- Protein-packed
chickpeas — 1/2 cup, seasoned and roasted
- Citrus 1 orange or grapefruit, segmented for a refreshing zing
- Crunchy shredded carrots - 1/2 cup
- Creamy avocado goodness- 1/2 avocado, sliced
- Fresh cucumbers- 1/2 cup, diced
Optional:
Drizzle with zesty lemon-tahini dressing:
- 2 tablespoons tahini
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- Salt and pepper to taste
- Water to thin if needed
Instructions:
1. Cook the Quinoa:Prepare quinoa according to package instructions and set aside.
2. Roast the Sweet Potatoes:Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper, then roast for about 25-30 minutes until tender.
3. Sauté the Swiss Chard: In a pan, heat a little olive oil over medium heat, add Swiss chard, and sauté until wilted (about 3-5 minutes).
4. Prepare the Chickpeas:If using canned chickpeas, drain and rinse them. Toss with olive oil, salt, and spices (like cumin or paprika), and roast in the oven for about 20 minutes until slightly crispy.
5. Make the Dressing:Whisk together tahini, lemon juice, olive oil, minced garlic, salt, and pepper. Add water to achieve your desired consistency.
6. Assemble the Bowl: Layer the cooked quinoa, roasted sweet potatoes, sautéed Swiss chard, chickpeas, citrus segments, shredded carrots, avocado, cucumbers, and seeds in a bowl. Drizzle with the lemon-tahini dressing.
