Client favorite! Surprisingly yummy, nutrition powerhouse, plant based meal or snack. 1 cup dried lentils makes 3 cups cooked so each of three servings includes 1 cup cooked lentils, 1/3 can of fruit (canned in natural juices), 2 tbsp chopped walnuts. 370 calories, 20 grams protein, 17 grams fiber.

Quick High Protein Plant Based Breakfast prep’d for the week. Each jar: 1/3 cup roasted edamame (bulk on Amazon) + 1/2 c (or 1/4 c) granola + 1/2 cup frozen berries + 1 cup milk (I like soy for the many health benefits, yes it’s super healthy don’t believe the hype). Add the milk and berries right before you eat or leave the house. 500 calories (or 385), 26 (or 24) grams of protein.

Planning ahead reduces decision fatigue and impulsive meal choices (often eating out).

After taking stock of what’s in the house I make a big meal list with needed ingredients in ( ).

On the right is this week’s plan.
Down the middle is the big list.
On the left is quick ideas, lunches, breakfasts.

When the kids are eating with us the meals are more traditional and meat centered.

It’s not fancy but it works.
