I shared this in my healthy choices group this week. If you want to be added to
this group, Let me know. In the group we share so many great recipes, health tips and health challenges too.

Apple Cider Chicken. Juicy chicken cooked with fresh apple cider, caramelized apples, and rosemary. An easy, healthy dinner that cooks in just ONE PAN!

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

4 teaspoons extra-virgin olive oil, divided

1 1/2 pounds boneless, skinless chicken thighs (about 8, depending on size)

1 teaspoon kosher salt, divided

1/2 teaspoon freshly ground black pepper, divided

1/2 cup fresh apple cider

2 teaspoons Dijon mustard

3 medium firm, sweet apples, cored and cut into 1/2-inch slices (I used Gala)

2 teaspoons chopped fresh rosemary, plus additional for serving

Directions:

Heat 2 teaspoons of oil in a large skillet over medium high. Sprinkle the top of the chicken evenly with 1/2 teaspoon kosher salt and 1/4 teaspoon pepper. Once the oil is hot and shimmering, add the chicken to the pan, top-side down. Let cook 4 minutes, then flip and continue cooking until the meat is cooked through and reaches an internal temperature of 160 degrees, 3 to 4 additional minutes. Remove to a plate and cover with foil to keep warm.

In a small bowl or large measuring cup, stir together the apple cider and mustard. With a paper towel, carefully wipe the skillet clean. Add the remaining 2 teaspoons of oil to the pan over medium high. Once the oil is hot, add the apple slices, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, and rosemary. Cook for 5 minutes, until the apples are lightly tender and begin to turn golden. Return the chicken to the pan and pour the cider mixture over the top. Let cook for 4 to 5 minutes, until the liquid is reduced by half. Serve warm, sprinkled with additional chopped rosemary as desired.

This recipe is best enjoyed the day it is made, but can last 1 to 2 days in the fridge. Reheat the leftovers gently in the microwave or on the stovetop with a bit of chicken broth to keep the chicken from drying out.

You can swap chicken breasts for the thighs, though I think overall, thighs give this recipe the best flavor. If you use chicken breasts, be sure to watch the cooking time, as it may vary from what is listed in the recipe.

For the month of October, I’ll be doing a fun Crocktober where we will be posting a favorite crockpot recipes (most high protein) in my Healthy Lifestyle private Facebook group. Let me know if you want to be added.

Crockpot Chicken Tacos
4 servings

Ingredients
For the Chicken
* 1.5 pounds boneless, skinless chicken breasts, or thighs
* 1 (1 oz) packet taco seasoning
* 1 (10 oz) can Rotel, strained to remove excess juice (You can also use picante sauce or salsa)
* Juice of 1 lime
Optional, For Serving
* Flour tortillas, or corn tortillas
* Pico De Gallo
* Guacamole, or sliced avocado
* Sour cream, or Mexican crema
* Lime wedges
* Cilantro
* Cheese
Instructions
* Spray a 6 or 7 quart crockpot with non-stick spray.�
* Lay chicken breasts flat in the bottom of the crockpot. Sprinkle chicken with taco seasoning and then top with Rotel and lime juice.�
* Place the lid onto the crockpot. Cook for 3 to 4 hours on high, or 7 to 8 hours on low, until chicken is cooked through and easily shredded. �
* Drain liquid - leaving about a half cup liquid remaining - and then shred chicken with two forks.�
* Warm tortillas on the stovetop (or wrap in a damp paper towel and heat in the microwave) and serve filled with shredded chicken and your favorite toppings!�
Notes
Store: Store leftover chicken in an airtight container for up to 4 days in the refrigerator.

Freeze: Place cooled leftover chicken in a freezer bag or freezer safe, airtight container and freeze for up to 3 months. For best results. thaw overnight in the fridge before reheating.

Reheat: Place the desired portion of chicken in a microwave safe container. Microwave until warm. If a little dry, add a little broth or salsa.

Rotel Alternatives: Use your favorite salsa, like this smoky salsa morita for an authentic flavor or salsa verde for a fun twist. You can use plain canned diced tomatoes. However, I recommend adding diced jalapeños, Serrano peppers or a can of diced green chiles for flavor.

Add-Ins: Add extra veggies like diced onions, bell peppers, corn and spicy peppers. For a fiber boost, add a can of drained beans!

Frozen Chicken: You can make this with frozen chicken breasts, just make sure to allow them the full 8 hours to cook.

Burrito Bowls: Skip the tortillas and serve this chicken over cilantro lime rice with all your favorite toppings.

I like real food, 🍔 I said...
I don’t think that I can go without 😰 food in order to fast, I said…
I can’t afford 💰this, I said...
I don’t want to be on this forever, I said...

I may have said those things, but wow have things changed.

Now I say...
I used to think about food and it controlled my life, now I eat to live.
I eat real 🥔🥗🥦🥩 food, and I am meeting all of my body’s DAILY protein (between 110-130g), vitamin, and mineral needs.
I practice intermittent fasting, and it’s so easy!
I feel better than I did in my 30s and I turned 58 this year! 😳
I work out, and love my energy and results.
My body is 💪🏻 stronger, I’ve lost 35 pounds ⚖️ and then gained muscle mass and am continuing to maintain.

I crave these shakes. (They help me be healthier and so why would I quit?) I am getting better, more balanced nutrition than I ever have in my entire life.

I started telling the truth: if I could afford a high priced coffee☕️ everyday and going out to eat multiple times a week, I could afford something that would potentially change my life. (I changed my mindset.)

I am worth it! 🥰! My life is worth it ❤️. I found my self-worth and made my health and quality of life my top priority. 📋

Can you relate to my life 7 years ago?

Don't let my current exercise routine and healthy lifestyle fool you - 7 years ago, I was struggling. I had back pain that made it hard for me to even get out of bed, and I was lucky to get 4 hours of sleep a night. I was irritable and uncomfortable, I was gaining weight in my midsection and I knew I needed to make a change. So, I did my research and realized that it wasn't about trying another diet, it was about giving my body the nutrients it needed. That's when I started my Isagenix nutritional reset, and now I'm proud to say that I exercise and sleep soundly every day, have energy and confidence, and manage my stress and inflammation better.

7 years of putting this nutrition in my body.

I’m definitely feeling better now then when I was in my 40s. It’s because I made a decision to put my health first.

How I felt then versus now…

✨Tired all the time versus More energetic 💥
✨Irritable and stressed vs having better control of managing stress💥
✨waking up hourly versus sleeping through the night (unless my dog wakes me up) 💥
✨ squirrel syndrome versus More focus 💥
✨puffy and achy joints versus being able to managing my inflammation 💥
✨having so many excuses to not work out versus excited and wanting to workout daily 💥

My excuse was, it’s because I’m getting older and I never thought I had a choice. I found out I did.
