BREAKFAST TACOS! ๐ฎ๐ฎ๐ฎ
During my recent visit to Texas, I had my first Breakfast Taco & I must say it was absolutely life changing! For those of you who donโt know, a breakfast tacos is a soft corn or flour tortilla filled with meat, eggs, or cheese & can also contain other ingredients. For my breakfast taco, I made it vegetarian & used what I had on hand in my fridge.
Ingredients:
- 1/2 of a Carrot, shredded
- 1/4 of a Bell Pepper, diced
- 3 medium Scallion, sliced
- 2 eggs
- 2-3 Soft Corn Tortillas
- 1 tablespoon of Vegetable Oil
- Cilantro (optional)
- Avocado (optional)
Directions:
-Heat pan over medium high heat & add vegetable oil.
-Add carrots, bell pepper, and scallions to the pan.
-While veggies are cooking, in a small bowl whisk eggs and add pinch of salt.
-Once the carrots are soft, add eggs until eggs are cooked through.
-In a separate pan, heat tortillas until warmed through or until a little brown on both sides.
-Place tortillas on a plate and top with cooked veggie & eggs.
I garnished my tacos with a couple of pieces of cilantro. And whenever I have an avocado on hand I make a quick 2 minute Guacamole with lime juice, cilantro and some salt and use it as a spread on my breakfast tacos.
