Using herbs such as cilantro, basil, rosemary, oregano, or thyme in your food can be a game-changer in making your food taste and smell amazing. They can be used fresh or dried. Keep in mind that dried herbs are stronger in flavor than fresh. When substituting in recipes, use the ratio of 3 fresh to 1 dried. Dried herbs should be used towards the beginning of the recipe while fresh should be used towards the end. When using dried herbs, crush them in between your fingers against the palm of your hand. This will wake up the herb and release the great flavor more quickly.

One of my favorite herbs is oregano. I add it to most, if not all, of my dishes. My mom often used it as the base of many of our dishes growing up and it has stuck with me.

BREAKFAST TACOS! ๐ŸŒฎ๐ŸŒฎ๐ŸŒฎ

During my recent visit to Texas, I had my first Breakfast Taco & I must say it was absolutely life changing! For those of you who donโ€™t know, a breakfast tacos is a soft corn or flour tortilla filled with meat, eggs, or cheese & can also contain other ingredients. For my breakfast taco, I made it vegetarian & used what I had on hand in my fridge.

Ingredients:
- 1/2 of a Carrot, shredded
- 1/4 of a Bell Pepper, diced
- 3 medium Scallion, sliced
- 2 eggs
- 2-3 Soft Corn Tortillas
- 1 tablespoon of Vegetable Oil
- Cilantro (optional)
- Avocado (optional)

Directions:
-Heat pan over medium high heat & add vegetable oil.
-Add carrots, bell pepper, and scallions to the pan.
-While veggies are cooking, in a small bowl whisk eggs and add pinch of salt.
-Once the carrots are soft, add eggs until eggs are cooked through.
-In a separate pan, heat tortillas until warmed through or until a little brown on both sides.
-Place tortillas on a plate and top with cooked veggie & eggs.

I garnished my tacos with a couple of pieces of cilantro. And whenever I have an avocado on hand I make a quick 2 minute Guacamole with lime juice, cilantro and some salt and use it as a spread on my breakfast tacos.
