Looking for a dessert that is simple yet elegant for Mother's Day? This is one of my all time favorite treats and they're surprisingly easy to make. The added touch of torching the sugar on top makes it seem, oh so fancy!
(Just plan ahead as there is some refrigeration time needed.)
Ingredients:
4 Cups Heavy Cream
2 Tsp Vanilla Extract
6 Egg Yolks
1 Cup Sugar (divided)
Directions:
1. Heat heavy cream and vanilla in a saucepan until hot, but not boiling.
2. Whisk egg yolks and 1/2 cup sugar until well mixed. Pour in the hot cream gradually, mixing continually.
3. Pour hot water into a large roasting pan. Place six ramekins into the pan (the water should come about halfway up the sides of the ramekins.)
4. Pour the egg mixture into the ramekins and bake at 325° for 45-50 minutes. (It should be set, but slightly jiggly.)
5. Remove the ramekins from the roasting pan and allow to cool to room temp. Cover with plastic wrap and refrigerate for at least two hours.
6. Remove at least 30 minutes before serving. Then spread a tablespoon of sugar on top of each ramekin.
7. Using a torch, melt the sugar until a crust forms. (You can broil them in the oven for a minute or two if you don't have a torch.)
For the sugared berries, whip an egg white until peaks form. Roll the berries in the egg and then in sugar. Let dry on racks or parchment paper.
