Looking for a dessert that is simple yet elegant for Mother's Day? This is one of my all time favorite treats and they're surprisingly easy to make. The added touch of torching the sugar on top makes it seem, oh so fancy!
(Just plan ahead as there is some refrigeration time needed.)
Ingredients:
4 Cups Heavy Cream
2 Tsp Vanilla Extract
6 Egg Yolks
1 Cup Sugar (divided)
Directions:
1. Heat heavy cream and vanilla in a saucepan until hot, but not boiling.
2. Whisk egg yolks and 1/2 cup sugar until well mixed. Pour in the hot cream gradually, mixing continually.
3. Pour hot water into a large roasting pan. Place six ramekins into the pan (the water should come about halfway up the sides of the ramekins.)
4. Pour the egg mixture into the ramekins and bake at 325° for 45-50 minutes. (It should be set, but slightly jiggly.)
5. Remove the ramekins from the roasting pan and allow to cool to room temp. Cover with plastic wrap and refrigerate for at least two hours.
6. Remove at least 30 minutes before serving. Then spread a tablespoon of sugar on top of each ramekin.
7. Using a torch, melt the sugar until a crust forms. (You can broil them in the oven for a minute or two if you don't have a torch.)
For the sugared berries, whip an egg white until peaks form. Roll the berries in the egg and then in sugar. Let dry on racks or parchment paper.

No one likes to cook while on vacation, but with a family of 6, eating every meal out would cost a small fortune. So we always get a place with a kitchen and plan a few quick and easy meals.
North Market Spices made this one super simple and absolutely delicious with their Greek Seasoning mix. Check them out for yummy, inexpensive, organic spices.

Chicken Gyros Recipe:
1 1/2 lbs. chicken tenderloins
1/4 olive oil
2 Tbsp Greek Seasoning mix
4-6 Naan or Pita Bread
Red/Green Lettuce Mix
Red Onions (Pickled are the best!)
Cucumbers
Cherry Tomatoes
Crumbled Feta Cheese
Tzatziki
Marinate chicken in oil and seasoning for at least 20 minutes. Grill until no longer pink (about 7-10 min) and then cut into chunks.
Place all other ingredients and chicken on Naan or Pita and enjoy!

Overnight oats have become a staple in our home recently. Pretty much everyone LOVES them! They're super healthy, easy to make, very affordable, great for on-the-go and crazy filling. I make a few different flavors at the beginning of the week (takes about 30 min start to finish) and by Friday they're gone. If you haven't jumped on the Overnight Oats train yet give 'em a try. I posted the recipe on our website (www.therudimentarylife.com) with a variety of flavor options. This one is Chocolate Peanut Butter Cookie and it's my faaaaaavorite! In fact as soon as I finished staging this picture? I gobbled them up for breakfast.😋

Life will bring disappointment, discouragement, and yes, even offenses.

We really have very little control over being offended. Sure, we can work at toughening our "emotional and spiritual skin" but even those with the emotional skin of a rhino will still eventually be offended . . . unfortunately it's bound to happen.

What can we control?? Well, we get to choose if we are going to live in that offense; if we are going to let that offense dictate the rest of our day, week, or sometimes . . . even our life.

Not saying in anyway that this is easy. In fact, it's very difficult . . . however, it's not impossible and it's not complicated. Here's tip to help.

* For a quick second think of why this offended and is there any truth to learn from it. 🤔

* If so, great! Take the truth, learn, apply where necessary and move on immediately. 😁

* If not, great! Move on immediately. 😉
