A recipe that has served me right time & time again - homemade pico and adding fruit if you’re feeling it! Can pair it with so so many things. Fish, chicken, grilled tofu, etc!

Homemade pico, for a large batch -
5-7 roma tomatoes
1 yellow or red onion
1 jalapeño
1 bunch cilantro
Juice of 2 limes
Salt to taste
*optional* pineapple & mango to add some sweetness!

Dense bean salad meal prep!! learned from the best 🥒🍅🫘

2 cans drained & rinsed cannellini beans
1 cucumber
2 tomatoes
2 bell peppers
5-6 stalks of celery
3-4 green onions
1.5 lbs lean ground turkey

For the dressing
2-3 tbsp olive oil, 1/4 cup white wine vinegar, 2 tbsp dijon, 1 tbsp honey, salt & pepper to taste

Chop everything into bite size pieces and combine! When cooking the ground turkey I added garlic & onion powder, salt & pepper, and oregano. Split into 4-5 meals for the week!
